Spring Rolls are my favourite, I make them quite often. But most of the time it is this Chinese veg spring rolls. They are my all time favourite. This version is a chilli cheese spring rolls. The filling is made with cheese, chillies and coriander leaves. They taste just fantastic. I used my leftover phyllo pastry sheets from my baklava recipe.

Spring rolls are inspired by Chinese cuisine and they are easy to prepare with different fillings like vegetables, chicken, paneer, corn, noodles or cheese.
In this recipe, the spring rolls are stuffed with a delicious mixture of grated cheese, capsicum, green chillies and red chilli flakes for a simple and flavourful snack.
Once fried, the spring rolls turn perfectly golden crispy on the outside, and the cheese melts beautifully inside. These cheese spring rolls are perfect for evening snack, party appetizer or special occasion. It tastes best when served hot with tomato ketchup, mayonnaise or any spicy dip of your choice.

Step by Step Pictures
1)Start by making the cheese filling. Take grated cheese in a bowl, you can use mozzarella cheese for best cheese pull.

2)Add in red chilli flakes and salt into the cheese.

3)Add in chopped bell peppers, you can even add in chopped onions, carrots.

4)Add in finely chopped coriander leaves.

5)Add in finely chopped green chillies and mix well.

6)Mix it well. This is your cheese filling.

7)Take one spring roll wrapper. Place it in front of you. Spoon some cheese filling in the centre of the wrapper.

8)Take some water and apply over the spring roll sheet.

9)Instead of water, you can use a paste made with flour and water.

10)Start rolling it. Make sure you roll it tight, so there is no air pockets.

11)Roll it one more time.

12)Fold both the sides from the spring roll.

15)Roll it well so the spring rolls is tightly secured.

17)Heat oil for deep frying, drop the rolled spring rolls into the hot oil and fry on medium high heat till golden brown.

18)fry them till it gets crispy and golden brown.

19)Remove the fried spring rolls to a paper towel lined plate.

20)Serve.

Expert Tips
- Don’t overfill the rolls with too much cheese filling. Add less filling to make the rolling easier and prevents the filling from opening while frying.
- Seal the edges properly using flour paste or water so the cheese doesn’t leak out while frying.
- Add salt carefully since cheese also already contains some salt.
- You can also bake or air fry the spring rolls for a lighter version. Brush lightly with oil before baking for a crispy texture.
Storage and Serving
Spring roll tastes best when served hot and crispy. Leftover spring rolls can be refrigerated for 2 to 3 days. Reheat them in an air fryer to make them crispy again. You can also freeze uncooked cheese spring rolls in a zip lock bag or airtight container. Fry them from frozen whenever needed.
