I had few really over ripe bananas on hand, whenever i get those bananas on hand, i pop them in freezer. So i can use them in cupcakes, muffins and cakes. This is one of the muffin which I did few weeks back. I added some oat in them to make it super healthy.

This muffins is a recipe which was in my mind for quite a long time. Finally i made it few days back and it was delicious. It tasted so healthy and filling, it has full of banana flavour and the addition of oats made it little more filling.

About Banana Oat Muffin

Banana oat muffin is a super simple and easy recipe made with very basic ingredients like banana, oats, wheat flour, sugar and milk. The natural sweetness of ripe banana when mixed with oats and wheat flour makes the muffin soft, moist and is full of flavour. 

I’ve been making cake, cupcake, muffin over the years, but recently switched to a healthier version of baked goods with wheat and millet flour. The use of wheat flour also yields a light, fluffy muffin with great texture and taste, as like all purpose flour. 

To make banana oat muffin, start by mashing the bananas in a bowl. Then add wet ingredients like oil, milk, vanilla essence, sugar and mix well. Next add dry ingredients like wheat flour, baking powder, baking soda and oats.

Gently fold everything together using a spatula until it is combined. Scoop the batter, and fill it in the muffin tray. Bake for 15 to 20 minutes.

  • Oats : There are different types of oats available in the market like steel cut oats, rolled oats and quick ( instant ) oats. For baking, quick oats or rolled oats are preferred. I have used instant oats. Or even try with oats flour.
  • Sugar : Adjust the sugar quantity based on the sweetness of bananas. Alternate with brown sugar, coconut sugar or honey. 
  • Leveling agents : Baking powder and baking soda are used to raise the muffin and make them fluffy. 
  • Salt : A pinch of salt is added to balance the sweetness.
  • Ripe banana : Use over ripe bananas as these add natural moist and sweetness to the muffin. 
  • Oil : Use any neutral oils like canola oil, vegetable oil. This fat helps the muffin to stay moist and tender. 
  • Milk : Milk is used to mix the dry ingredients together and also add moisture to the muffin. 
  • Vanilla essence : Use good quality pure vanilla essence, as it gives a little sweet aroma and makes muffin even more delicious. 

Step by Step Pictures

1)Line muffin tray with cupcake liners. Preheat oven to 200 degree c.

3)take ripe banana in a bowl.

4)Mash it roughly using a fork or potato masher.

5)Bananas are mashed.

6)Add in oil or melted butter.

7)Add in vanilla extract.

8)Pour in milk.

9)Add in sugar and mix well.

10)Now the wet ingredients is mixed well.

11)Add in oats.

12)Add in whole wheat flour.

13)Add in baking soda, baking powder and salt.

14)Use a fork or spoon to combine the batter. Don’t over mix the batter, just combine.

15)The muffin batter is ready.

16)Now use an ice cream scoop to fill the muffin batter into the cupcake cases.

17)Using ice cream scoop is easy and convenient.

18)I like to fill the muffins till the top.

19)Bake until muffins are cooked and looks golden.

20)Thats it muffins are baked.

Expert Tips

Preheat oven : Before starting to make muffin batter, first preheat the oven to 200 degree celsius. Line muffin tray with muffin cases. 

Air fry baking : Preheat the air fryer to 180 degree celsius. Use silicon muffin cups, small steel bowls or ramekins. Fill it with muffin batter and bake for 10 to 12 minutes. 

Pressure cooker baking : Don’t worry if you don’t have an oven. This muffin can be made in a pressure cooker. Preheat the cooker by placing sand or stand at the bottom. Place the batter filled cups, bowl or tumbler. Cook it in low heat for 10 to 12 minutes. 

Storage & Serving

Once the muffins are completely baked, let them cool before storing. Store them in an airtight container and it stays good at room temperature for 3 to 5 days.

Q. What else can I add to muffin batter ? 

You can try adding nuts or fruits like blueberry, dried cranberry, cashew, almond, walnut or chocolate chips. 

Q. Is it an eggless muffin ? 

Yes, it is completely an eggless banana oat muffin. 

Q. Why did my muffin turn dense ? 

This may be due to over mixing of batter or not adding enough leveling agents like baking powder and baking soda.

Q. How long can I store the banana oat muffin ? 

At room temperature, it can be stored in a container for 3 to 5 days. For longer storage, put them in the freezer for 1 to 2 months. Reheat them using a microwave oven. 

Q. Can I use steel cut oats instead of rolled oats ? 

No, steel cut oats won’t yield the soft texture like rolled or instant oats. So, it is not recommended to use them.
