Many of my viewers asked me for a fondant cake, so I decided to give it a try. For making that I want to make a layer cake. When I was thinking what to make. I remembered few over ripe banana lying in my fridge.

I also had few pineapple slices. So I decided to make a banana layer cake, I used pineapples in this because it makes the cake moist and flavourful.

Eggless banana pineapple cake is a soft, moist and flavourful cake with a fruity aroma. It is an easy cake recipe that is perfect for summer, birthday parties or any special occasions. 

I made this cake and frosted the cake with butter cream, then covered the entire cake in fondant. If you are not covering it with fondant, I recommend frosting the cake with whipped frosting.

I made a simple bow for the cake, even though it was not perfect, I loved it. Not bad for a home cook right.

The combination of ripe bananas and pineapple gives the cake a delicious fruit taste and keeps it moist without adding eggs. Since the fruits add natural sweetness, you can adjust the sugar according to your taste. You can also use whole wheat flour to make it a little healthier.

I usually freeze ripe bananas, as they are very useful for making different recipes anytime like bread, cake, muffin, smoothie and milkshakes.

This week, I already made a creamy banana milkshake and banana smoothie, so I used the remaining bananas along with some pineapple to make this delicious cake. 

There are many eggless cake recipes on my blog, but this banana pineapple cake is easy to make with simple ingredients. You don’t need any stand mixer or special ingredients.

Just mix all the ingredients in a bowl using a whisk and spatula, and you can make this soft and tasty eggless cake at home anytime.

Ingredients

  • All purpose flour : use plain flour for the cake, using wheat flour may affect the texture.
  • Sugar : I used granulated sugar, you can use caster sugar.  
  • Leavening agent : Both baking soda and baking powder helps the cake rise well without adding eggs. 
  • Banana and pineapple : Ripe bananas and pineapple are the key to keep this cake moist.
  • Milk : Milk adds extra moisture to the cake. 
  • Vegetable oil : Oil keeps the cake moist and soft.
  • Frosting : I’ve used my homemade chocolate butter cream frosting, since i was planning to cover the cake in fondant. You can use whipped cream which goes well with this flavour combo.

Step by Step Pictures

1)Preheat oven to 180 degree C (360 degree F). Take two 18 cm round baking pan and grease it with oil and dust it with flour and coat on all sides. Tap of the excess and set aside.

Dry Ingredients

1)Take flour in a sifter. Add in baking powder.

3)Add in baking soda.

4)Sift it together and set aside.

Wet Ingredients

5)Take oil and sugar in a large mixing bowl and mix together.

6)Add in pureed banana and pureed pineapples. These two keep the cake moist while making it eggless.

7)Mix both of this together.

Make Cake Batter

8)Now add in ½ of the sifted flour mix in.

9)Pour in ¼ cup of milk into the batter and fold gently.

10)Add remaining flour mix in and fold gently.

11)Don’t over mix the batter, fold it gently.

Baking the cakes

12)Divide this between two baking pan and spread evenly. Place it into oven.

13)Bake for 25 to 35 mins until the cake is cooked, insert a toothpick to check whether the cake is baked or not, if it comes out clean then the cake is cooked.

14)Let it cool in the cake pan for 15 mins. invert it onto a wire rack and cool it down completely.

15)Now place a cake on a plate and surround it with parchment paper or foil. Spread whipped cream or your favorite frosting over it and spread evenly.

16)Place another cake on top.

17)Top with some more frosting, spread it evenly on top and the sides.

18)Smooth the icing well.

19)Put it in fridge for 15 mins to set.

20)I baked this cake for a birthday party. So I covered the cake with fondant. This is optional.

21)Slice and serve.

Expert Tips

  • Since this is an eggless cake, use very ripe bananas for the soft, moist and fluffy cake. 
  • Adjust the sugar quantity depending on the sweetness of your banana and pineapple. 
  • Mix the batter only until all the ingredients are combined. Overmixing can make the cake dense. 
  • Let the cake cool completely before spreading the butter cream frosting. 
  • For extra flavour and crunch, sprinkle toasted coconut, chopped walnuts, and almonds on top before serving. 
  • If you don’t want to frost the cake, you can enjoy it as it is.

Storage and Serving

Store the unfrosted cake in an airtight container and it stays fresh at room temperature for 2 days. For longer storage, keep it refrigerated for a week. 

You can decorate the cake with any frosting of your choice. I have used buttercream frosting and fondant for decoration, but you can also use whipped cream or cream cheese frosting for special occasions, parties and birthdays.

Q. Can I add nuts ? 

Absolutely ! You can add chopped nuts like walnuts, almonds or pecans for extra crunch and flavour. 

Q. Can I make it without frosting ? 

Yes, you can enjoy the cake without frosting. It tastes soft, moist and delicious on its own.

Q. Why is my cake not soft and moist ? 

This happens if the batter is overmixed after adding the flour. Mix gently until everything is combined. 

Q. Can I make this cake as a single layer cake ? 

Yes, you can bake this cake in one pan. Reduce the recipe measurements by half and make a simple single layer cake.
