Chicken Pide is a traditional flatbread from Turkey. It is a boat shaped bread filled with tangy chicken filling, cheese and baked in a clay oven to get the perfect texture. I have made it into individual round pide which is easy to make and has all the flavours of authentic Turkish pide.

Chicken Pide Recipe

This is a soft and crispy chicken bread recipe which has spicy chicken filling is so popular in Turkey. I have seen so many versions of it all over the internet and this is my version. Traditionally pide is boat shaped, but I made into circle which was easy to make and tasted amazing.

About Turkish Chicken Pide

Chicken pide is a popular Turkish recipe made using basic pizza dough topped with spicy chicken filling and topped with cheese. Pide is often compared to pizza because of its toppings, but pide has an iconic boat shape.

This dish is so popular in the Black Sea region, where it is made in variety of variations. Traditional pide has minced meat filling, some recipe doesn’t even use cheese.

Pide is traditionally boat shaped, I have made a vegetarian version of pide on my youtube channel few years back in which I shaped it like a boat. But this one is a chicken pide which I shaped into round.

The filling is a tomato chicken filling, I used basic spices for it. You can in fact play around with the filling. Add oregano, basil or even chopped mushrooms, bell peppers. Relatively this is an easy and customizable recipe.

Pide is baked in a clay oven at very hot temperature to make the base crispy. To imitate the texture, I baked it on a hot oven in a baking tray which made the pide base crispy.

Ingredients

  • Pizza Dough – I used my basic pizza dough for the pide. Recipe is provided below.
  • Onions – chop onions finely so it sauted really well and mixes into the filling.
  • Garlic – garlic paste always enhances the taste of the chicken.
  • Tomatoes – finely chopped tomatoes adds tangy taste to the filling.
  • Tomato puree – a small amount of tomato puree adds saucy and umami taste to the filling. When mixed with cheese, almost gives pizza taste.
  • Spices – I used chilli powder, cumin powder . You can add any herbs like dried oregano, basil in this.
  • Chicken – I used boneless chicken thigh which is chopped into small pieces. You can use breast. Make sure to chop them finely.
  • Cheese – mozzarella cheese is sprinkled on top before baking makes cheesy texture on top.
  • Olive oil – brushed on top of the bread before baking to make it golden and crispy.

Step by Step Pictures

Make dough

1)Take luke warm water in a bowl or jug. Sprinkle 1 tablespoon of sugar and yeast into the warm water and mix it once. Now set this aside for 5 minutes for it to get foamy.

2)Now you can see the yeast has activated. It should looks so foamy.

3)Now in a large mixing bowl. Take plain flour. Add in salt to taste and mix it really well so the salt is evenly mixed into the flour.

4)Now pour in the foamy yeast water and use a fork to mix the flour into the yeast mixture.

5)The dough should come together like this.

6)Now add in olive oil into the dough and knead it until combined.

7)Apply olive oil on top of the dough and mix once.

8)Cover the dough with plastic wrap and set aside for 1 to 1.5 hours till the dough is doubled in size.

9)Keep the bowl in a warm place. I usually place it inside my oven, with just oven light on.

10)Look the dough has go doubled in volume now.

11)You can punch out the air from this and use in your recipe.

Make Chicken Filling

12)Heat olive oil in a pan. Add in chopped onions, tomatoes, garlic paste. Saute this for 3 to 5 minutes until onions and tomatoes soften.

13)You can add some salt so it cooks faster.

15)Now add in spice powders into the onion tomato masala.

16)Saute them until it turns into a mixture.

17)Now add in chopped boneless chicken and mix well. Saute for 8 to 10 minutes until the chicken is slightly cooked.

18)Add in tomato puree and some water and let the chicken cook until it is completely done.

19)Let the chicken gets completely cooked and the mixture should get thick and slight dry because we are going to use this to top over the bread. Allow this to cool completely.

Shaping Pide

20)Now take a small portion of the dough. Roll it into a smooth ball. Flatten it slightly on the work surface and place on a baking tray. Now use a bowl to press over the rolled dough. So the centre is thinner than the outer side. Spoon filling and cheese in the centre.

Brush side of the bread with olive oil. Place it into the preheated oven and bake until golden brown.

Expert Tips

  • You can add any spices or herbs into the chicken filling. Add fresh coriander leaves for a fresh touch.
  • You can use minced chicken instead of chopped chicken. Bell peppers, mushrooms can be used.
  • You can make the dough and filling upto 2 days in advance.
  • To Air fry, Cook at 200 degree C for 15 to 20 minutes.

Serving and Storage

Baked pides freezes beautifully. Lay it betwen parchment paper and freeze them for upto 2 months. Reheat directly in the oven until hot.

FAQ

Why are my pide hard?

If your yeast is not activated, then dough won’t rise and the bread will be hard. Over baking can make your baked bread hard.

What can I eat with turkish pide?

You can serve it with just soups or enjoy as it is.
