This is my take on a savoury cheese muffins. Can you believe these muffins are made without eggs. Yes I used flax eggs instead of eggs so vegetarians can enjoy it too. These muffins are so soft and taste great, texture is so soft like a pillow.

Savoury muffins are getting so popular these days. Specially if you are not a sweet person, then savoury muffins is the answer. The cool thing about savoury muffins are, you can enjoy it on its own, for breakfast with spreads or dips of choice, or with stews and soups.
This savoury cheese muffins is so basic, yet gives you perfect fluffy texture. I used plain flour, sugar, salt, baking soda and baking powder in the dry mixture. Wet ingredients is yogurt, oil, flax egg and water. Such an easy batter to make.
I used my mini muffin pan for this, so I got around 12 mini cheese muffins. You can use regular size muffin pan also, you will get around 6 muffins. The baking time for regular cheese muffins will be increased to 25 to 28 minutes. But I love the mini muffins, they are so cute.

This muffin batter is super easy to make. You don’t need any mixer, beater for making the batter. It is made using a mixing bowl and spoon. All you need to remember is not to over mix muffin batter.
Always remember, a lumpy muffin batter makes the soft and fluffy muffins. So you are allowed to be lazy here. Just mix the batter until it is just combined. Thats it.
These cheese muffins are baked in a high temperature oven. It is baked at 200 degree C which is quite hot. But this hot oven, gives the perfect muffin dome. This cheese muffins is perfect to pack in your kids lunch box.

Ingredients
- Flour – I used plain flour in the batter, you can use whole wheat flour for more healthy muffins.
- Sugar – even though this is a savoury muffin, you need a small amount of sugar to balance the taste.
- Salt – since cheddar cheese has salt added, you have to be careful when using salt.
- Raising Agent – baking soda and baking powder are the raising agent. This eggless cheese muffins recipe needs a little extra baking powder which cannot be reduced. It will affect the texture, if you reduce them.
- Yogurt – plain natural unsweetened yogurt adds the moistness which this muffin needs.
- Flax Egg – flax egg is 1 tablespoon of ground flax seeds mixed with 3 tablespoon of water. It becomes a gel like texture which is a best substitute for egg. Instead of flax egg, you can use regular egg. In that case, use 1 whole egg.
- Oil – I used sunflower oil. You can use any neutral tasting oil. Melted butter can be used in the batter which adds so much flavour.
- Cheese – I used freshly grated cheddar cheese, you can use grated mozzarella instead.

Step by Step Pictures
Flax Egg
1)Preheat oven to 200 degree C (400 degree F). Start by making the flax egg. Take 1 tablespoon of ground flax seeds in a bowl.

2)Mix ground flax seeds with water until combined. Set aside for 10 minutes. It will get slimy and gel like. This is your flax egg.

Dry Ingredients
3)Now lets mix the dry ingredients. Take plain flour in a bowl. Instead of plain flour, you can use whole wheat flour.

4)Add in sugar. You just need a little bit of sugar for taste balance.

5)Add in salt to taste. Cheddar cheese has salt added in them, so be careful when adding salt.

6)Add in baking powder.

7)You also need some baking soda. This helps the muffin rise and get fluffy.

8)Mix this really well using a whisk. This is your dry ingredients.

9)Add in grated cheddar cheese at this point and mix the cheese into the flour.

Make Cheese muffin batter
10)Now add in yogurt, and the prepared flax egg. Instead of flax egg, you can use regular egg as well.

11)Add in oil. I am using regular refined sunflower oil. You can add melted butter.

12)You also need to add some water. Again instead of water, you can use milk.

13)Mix gently to form a thick batter.

Baking Cheese muffins
14)Grease a 12 cup mini muffin pan with little oil using a pastry brush and set aside.

15)Spoon into mini baking muffin pan. I filled right to the top. if you are using regular size muffin tray, you will get around 6 muffins.

16)Top with extra grated cheese.

17)Place this into the oven and bake for 15 mins. If you are using regular size muffin tray, it will take around 25 minutes for the muffins to be baked.

18)Once the muffins are baked, remove from oven and allow it to cool for 8 to 10 minutes in the muffin pan. Remove the muffins from the pan and serve warm.
