After I made my whole wheat focaccia, I wanted to create a sandwich using that. You all know that I love sandwiches so much, you can see my ever growing collections of sandwiches. I decided to create a veggie sandwich. Luckily I had few of the veggies on hand and it turned out pretty good. I enjoyed it for my lunch.

About Vegetable Focaccia Sandwich
Vegetable focaccia sandwiches are one of my favorite ways to use homemade focaccia. For this sandwich, I used bell pepper, onion, zucchini, garlic, oregano, chilli and lemon juice.
I also made a simple mayo garlic spread with mayonnaise and finely chopped garlic, which makes the sandwich even more creamy and delicious.
You can easily change the filling according to what you have at home. Add roasted mushrooms, tomatoes, paneer, olives, spinach or tofu for a vegetarian version. You can also add chicken, eggs or cheese to make it more filling. The mayonnaise spread can also be replaced with pesto, hummus or cream cheese.
This is also a great recipe to make the leftover focaccia. Once the bread, vegetables are ready, simply slice the focaccia, spread the mayo, add roasted vegetables and enjoy. It makes a delicious breakfast, lunch, dinner or for evening snack.

- For Mayo : Use creamy mayonnaise as the base for the spread. It gives the sandwich a smooth, rich and creamy texture. To the mayo, add finely chopped garlic. It gives a delicious garlicky flavour to the spread.

Step by Step Pictures
Garlic Mayo
1)Start by making the garlic mayo. For Garlic Mayonnaise. Mix mayo with garlic in a small bowl until combined.

2)You can add ketchup or chilli sauce in this as well.

Make Filling
3)Heat oil in a pan, add in onions, peppers.

4) Add in zucchini, and chillies.

5)Saute the veggies on high heat.

6)Saute till it is lightly golden and well caramelized.

7)Add in garlic at this point. So the garlic doesnt burn.

8)Season lightly with salt.

9)Add in some oregano.

10)Add in lemon juice to taste.

11)Mix well. This is your veggie filling.

Assembling sandwich
12)Now lets assemble the sandwich. Take your whole wheat focaccia, and slit them in middle. You can toast them if you want too. Now spread the mayo on both sides.

13)Place a layer of lettuce.

14)top with the grilled veggies.

15) Place the other half on top and press down.

16)Now you can enjoy it immediately or wrap it in plastic wrap or foil for putting in lunch box.
