Okay, This is one recipe which I have been perfecting for a while now. I have baked 3 versions of it to land on this perfect ghee cake recipe. I took inspiration from my eggless pound cake to create this recipe.

My first two attempt turned out good but I was not at all satisfied with the result. First one turned out too oily, moist and fudge like, I liked the taste but not the texture. The second one turned out soft, but the colour of the cake was too pale.
For me ghee cake has to have a golden sheen on top, the inside should be soft, moist and filled with ghee and milk aroma when you slice into it. Finally I nailed the recipe, and here it is for you.
About Eggless Ghee Cake Recipe
So First, What is a Ghee Cake? Ghee cake is rich, buttery cake which is popular in many parts of the South India, specially Tamilnadu and Kerala. In Kerala, bakery cakes became especially popular for Christmas, weddings and other occasions.
Cakes were developed during the 19th and 20th centuries. European style cakes was introduced during the colonial period. But layer Indian bakers adapted it to the available ingredients like ghee, cardamom, nuts. Thats how this ghee cake was born.
Unlike other cakes that uses butter as the main ingredient, this ghee cake uses pure homemade ghee as the fat which makes the cake super moist and tender. Since ghee is one of the most common ingredient used in popular sweets like mysore pak, kesari, Tirunelveli halwa.

Ghee cake is super popular in Bakeries, usually uses cardamom, saffron, nuts sometimes even condensed milk to make the cake. But most bakery ghee cake tends to have eggs added in them. Because egg is what gives the Bakery style ghee cake texture, just like this whole wheat honey cake and bakery style honey cake.
But I wanted to create a recipe, that is eggless and filled with ghee flavour. So this is the recipe I came up with. The batter is made with basic ingredients like flour, sugar, ghee, milk, yogurt, raising agent. The one main ingredient which makes this cake unique is the addition of milk powder.
Milk powder not only adds the milky aroma, but also provides the cake structure. This cake is baked in a loaf pan and it takes nearly an hour to bake. As you can see the cake slightly sunk in the middle, but that is okay, it will be perfect baked and soft in the inside.

This clarified butter or ghee cake has the perfect texture even without adding eggs. In this cake I used yogurt and milk powder as perfect egg substitutes in this cake. The yogurt gives the tenderness to the cake and makes is super moist and the aroma of the ghee is just perfect.
It hold the cake together and give perfect clean slices. This cake was not too sweet at all. The sweetness is just perfect to pair with a cup of tea or coffee. You can add chopped nuts or some tutti fruity in this too.
I baked the cake at night and let it sit overnight and sliced it the next day. Look at the clean slices I got. So letting the cake rest is important. The aroma of pure ghee totally makes this cake unique.

Dry Ingredients
1)Preheat oven to 160 degree C (340 degree F). Line a 24 cm x 12 cm ceramic loaf pan with parchment paper and set aside. Take flour, milk powder, baking soda and baking powder in a bowl.

2)Mix this really well until it is combined.

Wet Ingredients
3)In another mixing bowl, add in ghee, sugar, yogurt, vanilla.

4) Mix well until combined. It will take around 2 minutes.

Make ghee cake batter
5)Now add in half of the dry ingredients into the ghee mixture.

6)Add in half of the milk and fold gently.

7)Now add in the remaining dry ingredients and fold them gently.

8)pour in the remaining milk into the batter.

9)The batter will be smooth and fluffy.

Baking Ghee Cake
10)Spoon the batter into the prepared loaf pan and place it into the preheated oven and bake for 45 minutes to 1 hour or until it is baked. Insert a tooth pick to check if the cake is baked, the skewer should come out clean.

11)Remove the cake from oven, let it cool for 30 minutes in the pan. The cake will be slightly sunk in the middle, but that is okay, it will be perfect baked and soft in the inside.

12)Remove the cake from the pan and let it cool completely. Once it is completely cooled slice the cake.

13)Enjoy ghee cake.

Expert tips
Ingredients quality – this cake taste totally depends on the quality of ingredients you use. Use best quality pure desi ghee for maximum flavour.
Right quantity – always use a kitchen scale to measure the ingredients. It has to be accurate to get the perfect texture.
No over mixing and over baking- whenever you make the cake batter, don’t over mix the batter. Gently fold the batter using spatula. Also never over bake the cake.
Using Correct pan – I used loaf pan for baking the cake. You can bake the cake in square pan also.
Storage – baked ghee cake can be sliced and stored at from temperature for 2 days. Keep in fridge upto a week, reheat in microwave for 10 seconds before serving.
Serving – ghee cake can be served as it is or with a cup of coffee or tea.
