Nungu Paal Sarbath also known as nungu paal is a refreshing summer drink which is very popular across South India specially Kanyakumari, Kerala and Tamilnadu. This Refreshing palm fruit sarbath is made with ice apple (nungu | palmyra fruit), nannari sarbath, milk and sabja seeds.

Summer is here, and our streets are filled with small shops selling palm fruit sarbath, tender coconut water, buttermilk vendors, and even millet porridge like ragi koozh, kambu koozh.

My all time favorite is nungu sarbath but hubby loves buttermilk and lemon soda. There is something about having a cup of cold nungu sarbath after a long day in the sun shopping and doing errands.

About Nungu Paal Sarbath

Nungu is also known as ice apple, tadgola, munjal or palmyra fruit. It looks like white translucent jelly which has so many cooling properties in them. This nungu is popularly consumed all over South India during hot summer for its cooling benefits. I like to use them in nungu pudding, nungu milkshake, nungu ice cream and nungu kheer.

In my home town nagercoil, this is one of the most loved and popular drink during summer. It is made into a drink which we call as nungu sarbath. It is nothing but mixing chopped nungu pieces with nannari sarbath.

While the simple Nannari Nungu Sarbath is the more traditional and common way of making it, these days, Nungu Paal Sarbath is taking over! It is made with chopped tender pieces of ice apple, sarsaparilla syrup (nannari syrup), cold milk and soaked sabja.

Nungu paal sarbath is number one summer drink because of its high hydration and cooling benefits. Palmyra fruit, nannari roots, sabja has natural cooling and hydrating properties. This drink is creamy, thick and so filling so people started choosing this more often these days. Thats why it got so popular.

Ingredients

  • Palmyra Fruit – nungu is also known as palmyra fruit, ice apple, tadgola. Choose tender pieces of this fruit for best taste. When buying this fruit from the vendor, it tends to come with a white membrane. You can leave it or remove it if you prefer.
  • Sarbath Nannari sarbath is used in this recipe for its flavour and taste. it is also called as sarsaparilla syrup. It has a unique aroma to it and also it is naturally cooling.
  • Milk – use cold milk for the drink. For vegan option, you can use coconut milk or almond milk.
  • Sabja Seeds – sabja seeds makes this sarbath more thick and tasty. It helps with hydration too. You can use chia seeds instead of sabja. Soak them for 1 hour before adding. Or you can completely skip sabja.

Sabja Seeds

1)Start by soaking or blooming sabja seeds. Take sabja seeds in a bowl.

2)Pour in water and leave them to soak for 15 minutes.

3)They will plump up and absorb all the water.

4)Take serving cup, add ½ cup of palmyra nungu pieces into the cup.

5)Top with 3 tablespoon of nannari sarbath. Add ½ of the soaked sabja.

6)Pour ½ cup of cold milk.

7)Mix well and serve cold.

Expert Tips

Palmyra fruit – Choose tender young palmyra fruit for this recipe. Tender nungu pieces taste best when made into drink.

Sweetener – I used nannari sarbath for sweetness. You can adjust the amount of syrup totally to your taste. If you don’t have the sarbath, you can use honey or maple syrup instead.

Milk – I used regular full fat cold milk. For vegan, you can use almond milk, coconut milk.

Sabja – sabja seeds makes this sarbath more thick and tasty. You can use chia seeds instead of sabja. Soak them for 1 hour before adding. Or you can completely skip sabja.

Serving and Storage – Nungu paal sarbath taste best when made and served immediately. But it can be stored in fridge upto 2 days.

You can make the same recipe with tender coconut flesh instead of nungu.

Q: Can I skip sabja seeds or what can I use instead of sabja?

You can totally skip sabja seeds in this recipe, or you can use chia seeds. Soak chia in water for 1 hour or overnight.
