Sometimes, I like to add a little cheese to my omelette, and trust me, it tastes so good! The combination of sauted onions and melted cheese makes it even more delicious. So today, I wanted to share my version of this simple, flavourful masala omelette that you can easily make at home for breakfast.
About Masala Omelette
Masala omelette is one of the popular Indian omelette recipe. Masala means spices, but a masala omelette doesn’t use any spices. The flavour comes from ingredients like onions, tomatoes, green chillies and fresh coriander leaves. These ingredients form the masala part.
But if you prefer spice powders added in egg, then you have to check my Indian egg omelette recipe. Most restaurants don’t add spice powders in masala omelette.
For variations, you can add cheese, sauted mushrooms, cooked spinach or any vegetables in your masala omelette. It totally makes the omelette even more filling and tasty.

The key to make perfect restaurant style masala omelette is in the cooking temperature. Like all omelette you have to cook it on medium heat so the egg outer doesn’t get dark colour and stays yellow.
You can choose to cook omelette in oil or butter. I like to cook my omelette in oil. I like to serve my masala omelette with grilled mushrooms and tomatoes which I cook in butter for flavour.
The seared mushrooms and grilled tomatoes taste so amazing when served with toasted sourdough bread and black coffee.

Ingredients
- Eggs – I always use 2 eggs per person. You can increase it to 3 or 4 as per your preference.
- Onions – Make sure you chop your onions very fine. So it disperse evenly on the omelette.
- Tomatoes – I like to remove all the seeds and the juices from the tomatoes. So the omelette doesn’t get watery.
- Green chillies – totally optional but adds spicy kick and flavour.
- Coriander leaves – Use freshly chopped coriander leaves for aroma and colour.
- Oil – You can cook the omelette in olive oil or butter as per your liking.
- Seasonings – salt and pepper are the seasonings. But you can add some turmeric and chilli powder if you want more spicy taste and colour.
