This is one which was sticking on my mind for quite a while and i finally got a chance to make it out. The result was truly satisfying and delicious. It is incredibly simple to make and I am sure it will be your kids favourite.

I made this like a log shape, but you can put this in a tray or a loaf pan and cut like a slice of bread or a piece of cake. This is incredibly easy to put together and so enjoyable when kids are around.

No-bake chocolate cake is also known as “chocolate salami” in Europe. The term “salami” refers to its salami sausage appearance. This dessert is no-bake and eggless, which makes it accessible for non-egg eaters and for those who want to make a dessert without an oven. 

The no-bake chocolate biscuit cake is a simple dessert made with five major ingredients like butter, biscuits, chocolates, milk, cocoa powder. It is easy to prepare and tastes irresistibly delicious. You can also involve your kids in the biscuit crushing process and also for rolling the chocolate mixture. It’s like a fun activity with your kids and a great way to spend quality time with them. 

Ease of preparation : This no-bake chocolate cake involves simple steps and does not require any fancy equipment or tools. It is perfect for beginners. 

Versatile : The recipe is so versatile you can customize with your favorite nuts like almonds, walnuts, hazelnuts. You can garnish the cake with your favourite toppings like melted chocolates, chocolate sprinkles, chocolate chips or chocolate ganache. 

Ingredients

Biscuits : Biscuits are the base of the recipe. I have used digestive biscuits which are less in sugar and have a neutral taste. If you want to have any flavour in your roll, then replace digestive biscuits with biscoff , chocolate cookies, almond biscuits. Digestive biscuits are easy to crush and provide the firm structure to the roll. 

Sugar : Sugar is added for the sweetness and also to enhance the overall taste of the cake. Adjust the biscuit quantity according to the biscuits that you are using. You can even substitute with condensed milk, honey, agave, coconut sugar.

Dark chocolate bar : Chocolate is the main ingredient that helps to bind the roll together. Use chocolate which is high in cocoa ( 75 to 90 % ) . The quality of the chocolate impacts the overall taste. For best taste, use couverture chocolate. 

Unsalted butter : Generally butter is one of the key ingredients in baking or in any dessert. Butter helps to bind the ingredients together once melted. It creates a soft, melt-in-mouth consistency once chilled and served. 

Milk : Milk adds moisture to the mixture and ensures a not too dry or crumbly roll texture. Use a full fat milk for a rich and creamy texture. For a dairy free option, you can try oat milk, almond milk, coconut milk. 

Cocoa powder : Cocoa powder intensifies the chocolate flavour and achieves a deep dark chocolate color to the roll. Try to use unsweetened cocoa powder. 

Hacks

Crushing biscuits : Crush the biscuits roughly including smaller and bigger pieces. It helps to form a firm structure while rolling. 

Mixing the ingredients : In a pan, first melt the butter, then add sugar, cocoa powder, dark chocolate pieces and cook until everything melted and combined smoothly. Then add crushed biscuits and turn off the stove. 

Rolling : Spread a parchment paper, pour the prepared chocolate biscuit mixture. Similar to candy, roll this into a log shape. Ensure the sides are completely sealed. Refrigerate it for at least 5 hours or let it set overnight for best texture. 

Slicing : Use a sharp knife to cut the cake. Clean or dip in hot water before slicing to achieve a neat smooth slice.

Take all your ingredients
I used digestive biscuits, you can use any biscuits as u like
take a biscuit
crush them doughly
do this for all the biscuits
now melt some butter in a pan
once it is melted
add in milk
and cocoa powder
stir that really well
now add in sugar
mix well till the sugar is melted
add in the chocolate pieces
stir till it is melted
add in the biscuit pieces
toss well

 

Now spread a parchment paper 
spoon the mix 
start rolling
twist the edges so you get a tight log like shape
this looks like a giant candy
now stick this in fridge and let it set for 2 to 3 hours
once it is set, unwrap the candy
cut into slices
enjoy

 

Expert Tips

  • Make sure to roll it tightly to ensure a clean firm shape. ● The butter should be at room temperature before melting. This helps to create a smooth buttery chocolate. 
  • For a nutty and crunchy texture, you can add chopped nuts like almond, pistachios, cashews, and walnuts. 
  • If you don’t have parchment or want to do it in a simple way, just pour the mixture in a baking pan and set it in the refrigerator. Chill and cut into a cake piece. 
  • You can also dust the log with cocoa powder or roll into shredded coconut for a decorative and flavorful outer layer. 

Storage

Store the no bake chocolate biscuit log in an airtight container. It stays good in the refrigerator for 3 to 5 days. For longer storage, keep the parchment chocolate log in the freezer. It stays good up to a month or so. Thaw them before slicing. 

Serving

Slice the roll and serve it on a platter. Garnish or dust the roll with some cocoa powder before serving. You can also serve it along with a scoop of ice cream of your choice or a dollop of whipped cream. 1.Can I use milk chocolates instead of dark chocolates ?

Yes, you can milk chocolate chips. But make sure to adjust the sugar quantity accordingly as milk chocolates are more sweeter than dark. Also the look and taste of the roll may differ. 

2.Can I make it as a vegan cake ? 

Substitute the dairy products with plant based alternatives like plant based butter, instead of dairy milk use oat milk or almond milk and a dairy free chocolate bar. 

3.Can I bake this recipe? 

Technically speaking this is a no-bake chocolate cake recipe. As the recipe does not include any eggs or flour to bake. Also the biscuits may become soggy while baking. You can enjoy this scrumptious dessert without baking. 

Variations

Flavoured no-bake chocolate cake : Experiment with different flavour profiles by adding orange zest, vanilla extract or espresso powder to enhance the overall chocolate taste. 

No bake chocolate cake : Add a pinch of cinnamon powder for a warm, spicy kick that contrasts with the chocolate sweetness. 

No bake chocolate ganache cake : Melt fresh cream and chocolate bars in a pan to form a smooth, glossy texture. Pour this over the chilled log before slicing. It is perfect for any special occasion or kids party.
