Chicken Samosa is a popular snack recipe. It is deep fried crispy triangular patti filled with a spicy chicken filling. It makes a great snack and taste great like my punjabi samosa with some tomato ketchup.

Chicken Samosa Recipe. Super crispy and flavourful samosa recipe with a different taste filling. This taste great with a cup of coffee or tea. Samosa is one of my all time favourite snack. It is recently I discovered readymade frozen samosa sheets and i am love with it.
You just make filling for the samosa and stuff them in this and fry them or bake them. So easy. I have already shared few samosa recipes in my blog.

Ingredients
- Samosa sheets : I have used readymade samosa sheets to hold the filling. This makes the process quick and easy.
- All purpose flour : A little flour is mixed with water to form a smooth paste to seal the samosa. It helps the wrapper hold the filling together so nothing leaks out while frying.
- Oil : Oil used to saute the onions, chicken and spices. It helps the ingredients cook evenly and release their flavour. Any neutral cooking oil works well.
- Onion : Onion forms the base of the filling and adds mild sweetness to balance the spices.
- Green chillies : Green chillies add heat that pairs well with chicken. Adjust the quantity based on mild or medium spiciness.
- Curry leaves : Curry leaves give the authentic South Indian flavour that enhances the taste of chicken filling.
- Ginger garlic paste : Use freshly grounded ginger garlic paste for strong flavour. It infuses well with chicken and balances the spices.
- Chicken breast : I have used chicken breast for the filling. It turns tender, soft when cooked and absorbs the spices well.
- Spice powder : Turmeric powder, chilli powder and garam masala powder are the main flavouring spices that adds flavour, color and aroma to the filling.
- Salt : Salt is used to balance the overall taste of the filling.
- All purpose flour : All purpose flour is used to thicken the filling slightly and it helps in absorbing the moisture from the chicken mixture.
- Chicken stock : Chicken stock adds a rich flavour to the filling.

Step by Step Pictures
Cooking Chicken
1)take chicken breast in a pressure cooker. Add salt, water and cover the cooker. Pressure cook for 2 to 3 whistle. Let the steam escape by itself. Open the cooker and remove the chicken. Allow it to cool.

2)Chop chicken into small pieces. Set this aside.

Make Filling
3)First make the filling. Heat oil in a pan, Add in onion, curry leaves and green chillies.

4) Add in ginger garlic paste and saute for a minute.

5)Add in salt and turmeric powder and mix well.

6)Add in chilli powder, garam masala powder.

7)Stir fry the spices for a minute.

8)Add in plain flour and stir fry for 2 minutes.

9)Stir fry for couple of minutes until fragrant.

10)Pour in chicken stock or water on the flour.

11)Add in cooked cubed chicken.

12)Mix well and cook till thicken.

Shaping Samosa
13)Take a samosa patti. spoon the filling in the samosa patti.

14)Fold the samosa patti.

15)Keep fold the samosa.

16)Keep folding the samosa.

17)Fold this till end.

18)Mix flour with water to make a paste. This is used to stick the samosa. Now fold like a samosa and seal the edges with flour and water paste. now the samosa is sealed.

19)seal the samosa.

20)Samosa is done.

Deep fry samosa
21)Heat oil for deep frying. Drop samosa in hot oil, fry till golden brown.

22) Strain the samosa using a slotted spoon. Serve.

23)Serve hot.

Expert Tips
Seal the samosa well : Always make sure to seal the edges tightly with the flour paste. This prevents oil from getting into the samosa while frying and keeps the fillings intact.
Don’t overfill : Fill about 2 to 3 spoons of filling per samosa. Overfilling can crack the wrapper and make folding difficult.
Cool the filling : Always let the chicken mixture cool completely before wrapping. This prevents the pastry sheet from becoming soggy while folding.
Air frying : For a lighter, healthier version, air fry these samosa instead of deep frying. Brush the samosa with a little oil and fry them. You’ll get the same golden crunch with less oil usage.
Storage : Arrange the wrapped chicken samosas in an airtight container and freeze them for up to 1 month. You can fry or air fry them directly from frozen. No need to thaw the samosas.
