Though sev puri and papdi chaat may look similar because they use the same kind of ingredients. However, sev puri is usually made with crispy puris and does not contain yogurt, while papdi chaat is topped with curd for a rich and creamy taste.

- Potatoes – 1 peeled, cubed and boiled
- Green Chutney as needed
- Dates & Tamarind Chutney as needed
- Onion – 1 medium size chopped finely
- Tomatoes – 1 medium size chopped finely
- Coriander leaves as needed finely chopped
- Sev / Oma podi as needed for topping
- Chat Masala Powder to taste

Ingredients
- Papdi or puri : Papdi or puri are crispy crackers that are used in many Indian chaat recipes. you can use either homemade or store bought papdi / puri.
- Potatoes : potatoes are boiled and cubed make the chaat more filling.
- Green chutney : Green chutney is made with coriander leaves, mint leaves, green chillies and lemon juice. It adds fresh and spicy flavour to the chaat.
- Dates & Tamarind chutney : Dates chutney, also known as sweet chutney, is made with dates and tamarind. It gives the sev puri a delicious sweet and tangy street style taste.
- Vegetable : Finely chopped onions and tomatoes are added. It also makes the chaat more flavourful and colorful.
- Coriander leaves : Fresh coriander leaves are used for garnishing.
- Oma podi / Sev : Sev or oma podi is made with gram flour and it adds extra crunch and texture to the sev puri.
- Chaat masala powder : Chaat masala powder is sprinkled on top to give the street style chaat flavour.

Step by Step Pictures
1)Take some papdi or puri which we used to serve for pani puri and arrange them in a plate. If you are using puri, slightly make a hole on them.

2)Top with some cubed boiled potatoes.

3)Top with chopped onions.

4)Add in chopped tomatoes.

4)Spoon green chutney on top of the potatoes, onions.

5)Now drizzle top with some sweet chutney.

6)Take some chaat masala powder and sprinkle all over the chaat. I also added some red chilli powder.

7)Sprinkle top with sev generously.

8)Garnish with coriander leaves and enjoy.

9)Serve.

- Make sure potatoes are boiled and cooled completely before assembling.
- Chop the onions, tomatoes and coriander leaves finely.
- Prepare all the chutneys in advance and store them in the fridge for easy assembling.

You can store the chutneys separately in an airtight container in the refrigerator. Boiled potatoes can also be kept in the fridge for 1 to 2 days.
