Ingredients
- All purpose flour : use plain flour which makes the cake tender, light and moist. Using whole wheat flour may results slightly dense cake, but still it will taste great.
- Baking powder : Baking powder acts as a leavening agent that helps the cake rise and become light and fluffy.
- Salt : A pinch of salt enhances the overall flavour and balances the sweetness in the cake.
- Cooking oil : Use any neutral flavoured cooking oil like canola oil, vegetable oil or sunflower oil. This adds moisture and keeps the cake soft and tender for a longer time.
- Curd / Yogurt : Curd makes the cake moist and soft. It also helps in creating a tender, fluffy texture.
- Sugar : I used granulated sugar, which gives the cake white finished look.
- Eggs : Eggs acts as a binding agent that brings the ingredients together and provides the structure to the cake. They also help create a light, airy texture.
- Vanilla extract : Vanilla extract adds a pleasant aroma and enhances the overall flavour of the cake.
- Optional : You can use dried fruits or colourful chopped candied fruits.

9)Add in plain flour in this mixture.

10)Add in baking powder.

11)Now use the whisk to combine the flour into the batter. Don’t over mix the batter.

12)The batter should be combined like this.

13)Now add in the flour coated candied fruits into the batter.

14)Fold gently until combined.

15)Pour this into the prepared loaf pan. Spread evenly and place it into the preheated oven.

16)Bake until cooked and golden.

17)Allow the cake to cool for 10 minutes, before de moulding from the loaf pan. Allow it to cool completely. Slice and serve.

Expert Tips
- Always sift the dry ingredients together to get a lump free batter, which helps the cake turn soft and fluffy.
- Use fresh and well whisked yogurt for best results. Avoid sour curd as it can affect the taste of the cake.
- Don’t overmix the batter once the flour is added. Mix gently to keep the cake soft and airy.
- Fill the cake tin only up to three fourths, so the cake has enough space to rise properly.
- You can also mix in chopped nuts, chocolate chips, raisins or orange zest for extra flavour and texture.
Storage and Serving
Store the yogurt cake in an airtight container at room temperature for 2 to 3 days. For longer storage, keep it in the refrigerator for up to a week. This cake stays soft even after refrigeration because it is made with oil.
Serve the yogurt cake warm at room temperature with a cup of tea or coffee. You can also enjoy it plain as a simple tea time cake or drizzle chocolate sauce or dollop of whipped cream for a dessert style. Slice it into thick pieces and serve as a snack for kids lunch boxes or for travel.
