Garlic Butter Pasta Recipe

I first made butter garlic pasta nearly 10 years ago, it is just basic ingredients sauted together with cooked pasta. Nothing special about it, just your regular recipe.

About Garlic Butter Pasta

Butter garlic pasta recipe sounds basic and simple, but It is one of the popular pasta dish that is loved by many. It is all because of the combination of ingredients that works together like butter, garlic, herbs, cheese. 

Even though the ingredients are simple, using it the right way applying the correct techniques will creates the creamiest pasta of all the time. 

The sauce comes together in a blender. It is actually a no cook sauce, but you need a bit of cooking like blanching garlic and melting butter and boiling pasta. Other than this the dish is made by blending and tossing with noodles.

One important step you have to do is, blanching garlic. It mellows the garlic and makes the sauce fragrant and less pungent. Blanched garlic is blended with butter that I flavoured with Italian seasoning and chilli flakes. 

Instead of butter you can use olive oil as well which creates much lighter sauce. To add more umami taste, i used freshly grated Parmesan cheese when blending.

Now comes the most important part is emulsifying the sauce with the starchy pasta cooking liquid. As soon as you add the hot liquid it creates emulsified texture to the sauce. Thats it garlic butter sauce is ready.

Ingredients

  • Pasta – it is best to use spaghetti in this dish. But you can use any pasta shape that you like. 
  • Garlic – I used nearly 120 grams of spaghetti, for that I used around 10 cloves of garlic. 
  • Butter – use a good amount of butter because that forms the base of the sauce. Instead of butter, you can use olive oil. 
  • Seasonings and herbs – Italian seasoning and red chilli flakes is used as flavouring the pasta. 
  • Parmesan – use freshly grated Parmesan cheese which helps create the creamy texture when blending with the pasta water. 
  • Coriander leaves – finely chopped coriander leaves or parsley is used as garnish in this dish. 

Step by Step Pictures

1)Take butter in a small sauce pan. Instead of butter you can use olive oil as well.

2)Melt the butter on low heat till completely melted. Remove from heat.

3)Once the butter is melted, remove it off the heat. Add in Italian seasoning and red chilli flakes and mix well.

4)Thats it, your melted herb butter is ready.

5)Bring 2 litre of water to a full boil. Add in salt to taste. Now add in the garlic cloves in the hot water and blanch for 30 seconds.

6)Strain the garlic cloves using a slotted spoon and set aside.

7)In the same hot water, add in spaghetti and cook as per package directions.

8)While the paste is cooking, make the sauce. Take blanched garlic and the melted butter in a small blender.

9)Blend this for 30 seconds to a minute until it is blended.

10)Add in freshly grated Parmesan cheese into the blender.

11)Pour ½ cup of the hot pasta cooking starchy liquid and blend till creamy.

12)It will emulsify and become like a thin mayonnaise. Keep it aside for a minute.

13)Meanwhile the pasta should be cooked. Remove it from the hot water and add to a bowl using tongs.

14)Pour the blended garlic sauce over the hot pasta.

15)Add in finely chopped coriander leaves. Pour a ladleful of the hot pasta cooking liquid if needed and mix really well to emulsify which creates a creamy sauce.

16)Look how creamy the sauce is.

17)Serve immediately.


Expert Tips

  • Blanching garlic cloves in hot water for 30 seconds mellows the flavour and makes it milder. 
  • Instead of butter you can use olive oil as well. 
  • Never discard the pasta cooking liquid. Because you might need to use more pasta water as needed to make the sauce. 
  • You can add any vegetables like boiled green peas or sweet corn in this. 
  • Extra Parmesan cheese adds more depth of flavour.

Serving and Storage 

Enjoy garlic pasta hot with toasted bread. If you are planning to store this for long time. You can keep aside some of the pasta water to emulsify the pasta when serving. Make sure to heat the pasta water till hot before adding it into the pasta.

FAQ

Can I use any pasta shape in this dish?

Yes you can use any pasta shape. But spaghetti works perfect. 

Can I skip Parmesan cheese?

You can skip Parmesan cheese but it adds umami taste to this dish and also helps with the emulsification. 

Can I reduce the amount of butter? 

No you need butter or oil to make the sauce. Reducing it may affect the texture.
