About Fruit Cream

Mixed fruit cream, also known as creamy fruit salad, is a simple no-cook dessert that is perfect for hot summer days. It is made by mixing fresh chopped fruits with greek yogurt, whipped cream and a little sugar to make a smooth and creamy treat.

One thing to keep in mind in making fruit cream is to balance the cream and curd properly. Adding too much cream makes it very heavy, while too much curd can make it slightly tangy. When mixed in the right way, the dessert will turn out perfectly creamy, fresh and delicious.

This recipe is quite similar to fruit custard, but much lighter, creamier and doesn’t require cooking. While fruit custard has a thick, pudding-like texture, mixed fruit cream is softer, smoother and feels light in every bite.

Ingredients

  • Greek yogurt : Hung curd or greek yogurt is the base of this dessert. It gives a thick and creamy texture and its slight tangy taste balances the sweetness of the fruits.
  • Whipping cream : It makes the dessert creamy and airy, which gives a perfect melt-in-mouth feel.
  • Vanilla – even though this is optional, adding a dash of vanilla helps with the flavour.
  • Fruits : Apple, Guava, Pomegranate, mangoes and grapes are used. These fruits add natural sweetness and fresh juicy taste in every bite.
  • Sugar : You can also use powdered sugar as it mixes easily and evenly.
  • Walnut : Walnuts are added for extra crunch. It gives a nice contrast to the fruits and adds a mild nutty flavour to the dessert.

Step by Step Pictures

1)Take greek yogurt in a bowl. I used my homemade greek yogurt.

2)Add in sugar. Instead of granulated sugar and vanilla extract, you can use icing sugar also.

3)Cream it together until sugar is combined.

4)Add in whipped cream. You can lightly whip fresh cream till thick.

5)Fold cream into the yogurt mixture until combined. Set aside.

6)Now start adding the cut fruits one by one. I am using grapes, pomegranate kernels.

7)Add in finely chopped apples for crunchy texture.

8)Add in chopped guava.

9)Add in peeled and cubed ripe mangoes.

10)Now for crunchy texture, add in toasted walnuts. You can use almonds or pistachios.

11)Fold the fruits and nuts into the cream. Place this mixture into the fridge for few hours.

12)Serve cold.

Expert Tips

  • Wash and dry the fruits completely, otherwise the cream can turn watery.
  • Always use cold whipping cream, as it whips better and helps to achieve a thick, creamy texture.
  • Apples can turn brown quickly, so chop them just before mixing. You can also add a few drops of lemon juice to the apples to keep them fresh.
  • Since fruits already have natural sweetness, add sugar right after mixing the fruits and adjust as needed.
  • Don’t mix fruits too early. Add them just before serving or a couple of hours before to keep the cream thick and fresh.
  • I have added walnuts for extra crunch, but you can also use any nuts or seeds of your choice for extra texture.

Storage and Serving

Store the mixed fruit cream in an airtight container and keep it in the refrigerator. It tastes best when chilled for at least an hour before serving. If stored properly, it stays fresh for 1 to 2 days like my fruit custard.

FAQ

Q. Which fruits are best for fruit cream ?

You can use any seasonal fruits for this recipe. Make sure to choose firm and slightly sweet fruits like apple, banana, mango, grapes, berries, pomegranate and guava. Avoid watery and citrus fruits like watermelon, muskmelon and oranges.

Q. Can I make fruit cream ahead of time ?

Yes, you can prepare them a few hours in advance and keep it chilled. For best results, add the fruits right before serving so they stay fresh and don’t make the cream runny.

Q. Can I make it vegan ?

Yes, you can make a vegan version by using coconut cream instead of dairy cream. Also replace sugar with maple syrup and use dairy free yogurt instead of hung curd.

Q. Why did my fruit cream become watery ?

This usually happens when fruits release water or are not dried properly before mixing. Over time, fruits release their juice naturally, which can make the cream watery. To avoid this, dry the fruits well and gently fold them into the cream instead of overmixing.
