It is also known as Elaneer ice cream and it is completely eggless, easy to make and you don’t need an ice cream maker or stabilizer to prepare it. It has a smooth and creamy texture with little pieces of tender coconut in every scoop has a delicious coconut flavour.

Tender coconut is one of my favorite flavours, check my elaneer payasam. They are so tasty and refreshing. I used to order this every time we visit Ibaco. One day when I saw few tender coconut lying in the house, I decided to try this ice cream. Luckily I had cream and condensed milk on hand.

I made this and the first bite, was unbelievable. It was so creamy and so delicious, this is one of the best Ice cream I ever made and ever tasted.

Tender coconut is one of my favorite summer flavours. It is light, refreshing and naturally cools your body.  You have to check my tender coconut pudding which is my all time favorite.

Tender coconut ice cream is so popular, it is also known as elaneer ice cream. This recipe is made with simple ingredients at home like fresh tender coconut flesh, cream, condensed milk, milk and sugar. Using real and fresh coconut gives the ice cream the natural flavour.

It is a quick recipe and takes about 10 minutes to prepare the ice cream base and you don’t need an ice cream maker. The ice cream base sets beautifully on its own in the freezer.

This is completely vegetarian recipe which doesn’t include eggs, artificial flavours or stabilizers like GMS, CMC in this recipe like my vanilla ice cream.

One cool thing about this is, the ice cream base is no cook and it comes together in a blender. Even I whipped the cream in my blender. I use amul cream, and use only the thick part of the cream. It has to be super cold and pulse few times to whip it.

It is easy to whip cream in a blender, since for this recipe you don’t need it to be stiff peaks. Take care not to over blend, else it may turn into butter.

Ingredients 

  • Cream : use full fat cream for this recipe. Heavy cream or whipping cream is best. If you are using amul cream, use only the thick part.
  • Tender coconut flesh : The main ingredient. Blend most of it into the base and add a few chopped pieces for extra texture. 
  • Sweetened condensed milk : It adds sweetness and makes the ice cream extra creamy. It also helps to set the ice cream into a soft texture without adding eggs. 
  • Sugar : Sugar added for extra sweetness and to balance the flavours. You can adjust the amount depending on how sweet you prefer. 
  • Milk : helps blending the ingredients together.

Step by Step Pictures

1)Start by blending coconut flesh. Take tender coconut flesh in a blender jar.

2)Add in condensed milk, sugar, milk and blend.

3)This doesn’t need to be super creamy. Slightly chunky is fine too.

4)Transfer this blended mixture into a mixing bowl. Add in finely chopped tender coconut pieces in this and mix well.

5)Now in the same blender take cream and pulse few times till it thickens.

6)Don’t need to whip till super thick, slightly thick is fine.

7)Add this into the coconut mixture and fold gently.

8)Spoon this into a freezer safe container and freeze overnight.

9)Scoop and serve.

10)Enjoy.

  • Use fresh, soft tender coconut for the best flavour and creamy texture. 
  • Add finely chopped tender coconut pieces at the end for a delicious bite in every scoop. 
  • If your coconut is already very sweet, reduce the amount of sugar accordingly. 
  • Cover the container with a cling wrap before closing the lid, as it prevents the formation of ice crystals. 
  • Freeze the ice cream overnight for the best scoopable texture and flavour.

Storage and Serving

Store the tender coconut ice cream in an airtight freeze safe container. It stays well in the freezer for up to 2 weeks. 

Serve the ice cream scoop in bowls, waffle cones. While serving, top it off with fresh tender coconut pieces, toasted coconut flakes or chopped nuts for extra texture.

Q. Can I make this ice cream without an ice cream maker ? 

Yes. This is a no-churn recipe, so you don’t need an ice cream maker. Just prepare the ice cream base using a blender, pour it into a freeze safe container and freeze until it sets. 

Q. How long should I freeze the ice cream ? 

Freeze the tender coconut ice cream for at least 6 hours or overnight until it is fully set and scoopable. 

Q. Can I add other flavours ? 

Yes. You can add chopped tender coconut pieces, almonds, toasted coconut flakes or a little coconut extract for extra flavour and texture.
