Looking for easy ways to include more vegetables in your diet, then this is a best recipe for it. I wanted to make a soup that taste restaurant style but still healthy and nourishing. It has lots of vegetables, noodles packed in one single bowl of soup.

The soup starts with aromatics like ginger, garlic, onions and celery. Then you can add whichever veggies you prefer. Load the soup with vegetables, cooked chicken and tofu to make it more filling.

The noodles which I used in this soup is soba noodles, you can use any pasta, rice noodles or glass noodles. But soba makes this more nourishing.

I cooked the noodles in my broth which makes this soup, an easy one pot meal. You don’t need to dirt another dish to cook the noodles. Instead of noodles, you can add a handful of small pasta like Orzo, or Ditalini.

And this dish is great for meal prep, you can make and store in fridge. The one thing which I will let you know is to add the noodles just before you eat. Since noodles keep on absorbing the water as it rests in fridge.

Ingredients

  • Oil – I used regular cooking oil like olive oil or vegetable for cooking the soup.
  • Aromatics – For aromatics, I used onions, ginger, garlic, celery and carrots in the soup. It forms the base for the soup.
  • Vegetables – For vegetables, I used carrots, green beans, cabbage, purple cabbage.
  • Stock – I used vegetable stock for the soup. You can use just water or chicken stock.
  • Noodles – For more nourishing soup, I used soba noodles. You can use any noodles or pasta in this.
  • Seasonings – Salt, sugar, black pepper powder are the seasonings I used. for restaurant style taste, you can add MSG.
  • Sauces – soy sauce, ketchup and vinegar adds a perfect balance of taste.
  • Spring Onions – add lots of spring onion in the end for more flavour.
  • Toasted Sesame Oil – a small drizzle in the end adds more flavour.

Step by Step Pictures

1)Heat oil in a large pot. Add in ginger, garlic and saute for a minute until aromatic.

2)Add in onions, celery and carrots. Saute this for 2 minutes until fragrant.

3)it will cook down and get aromatic.

4)Now add in all the vegetables like green beans, cabbage, purple cabbage, bell peppers.

5)Now add in all the vegetables mentioned and stir fry for 6 to 8 minutes until the vegetables get aromatic and cooks down a little.

6)Now pour in water or vegetable stock and bring it to a full boil. Once the stock boil, we can add in noodles.

7)Add in soba noodles and cook for 5 minute until noodles is cooked. You can use any noodles or pasta as you like. Once noodles is cooked add in all the seasoning and sauce.

8)Add in soy sauce. You can use light soy sauce, if you prefer the soup slight light in colour.

9)Add in tomato ketchup. Even though this is optional, it adds a wonderful taste to the soup.

10)Add in vinegar to taste. It is for the tangy taste.

11)Now for seasoning, add in salt, sugar.

12)Mix well and taste. Adjust the sauces and seasoning to your taste.

13)Meanwhile mix cornstarch with some water until combined.

14)Pour this into the soup and mix well. Bring it to a boil again. The soup will thicken.

15)Finally add in black pepper powder, spring onions and toasted sesame oil.

16)Veg noodles soup is ready to serve.

17)Enjoy hot.

  • You can add whichever vegetables you like in this soup.
  • For protein, you can use tofu, paneer along with the vegetables. Cooked chicken, prawns can be added if you are non vegetarian.
  • When serving, extra condiments like chilli oil, soy sauce, boiled eggs, can be added.

Serving and Storage

Veg noodle soup taste best when served hot. If you are meal prepping, make the soup separately, cook the noodles separately and store in separate containers. Mix at the time of reheating and enjoy.
