In this period everyone is chasing for high protein meals to hit their protein goal for the day. Many people struggle to find high protein meals which are easy to put together. That’s when this chicken omelette is a life saver.

I like to have this for my OMAD and I can easily achieve my 77 gram protein with this single omelette. And as a bonus mention, this is super yummy. So here I am sharing my perfect chicken omelette with you all.

Omelette is one of the most popular dish around the world. Each country has their own way of making omelette. In India we make it spicy, addictive Indian omelette which is served over rice. But my top favorite is this mushroom omelette.

Okay, now coming to this high protein omelette. This is a recipe which I came up for my OMAD diet. I wanted to have few recipes handy which are easy to put together and high in protein as well. Like my mapo tofu udon, protein shake and this paneer pasta.

My recent favorite is this chicken omelette. I like to use whole eggs in my meals rather than egg whites. So I used around 4 whole eggs, But you can use egg whites instead of whole eggs.

Just use 4 eggs, 1 chicken breast to make this omelette and you get around 78 grams of protein from this one meal.

I love my omelette Indian style. So I used onions, tomatoes, ginger, garlic, spices which made this so tasty and satisfying. Adding chicken in omelette is a genius way to make this filling. Check my chicken egg scramble recipe.

I made the chicken filling first, then poured the egg over. Cook this omelette on low heat covered so the egg sets on top. This way you don’t need to flip the omelette. You can serve it as it is.

You can have this omelette as a main dish along some salad, or enjoy as side with rice.

Ingredients

  • Eggs – I used 4 eggs for this omelette. Instead of whole eggs, you can use egg whites as well.
  • Chicken – I used boneless chicken breast which cooks faster and is high in protein. You can use chicken thighs which takes longer time to cook.
  • Onions – use finely chopped onions for making the masala. Shallots or spring onions can be used instead.
  • Tomato – use finely chopped tomatoes which adds the tangy taste to the dish.
  • Ginger Garlic Paste – it adds aroma and flavour to the chicken mixture. You can use freshly finely chopped ginger and garlic instead.
  • Green Chillies – you can skip green chillies if you prefer.
  • Spice Powders – I used red chilli powder, garam masala powder, salt, black pepper powder.
  • Oil – I used coconut oil, you can use regular cooking oil, ghee or butter too.

Step by Step Pictures

1)Take egg, salt and pepper powder in a bowl and whisk to combine.

2)Set this aside till you are ready to use.

3)Heat coconut oil in a nonstick skillet in which we are going to make the omelette. Add in onions, green chillies and ginger garlic paste. Saute for couple of minutes until aromatic.

4)Add in tomatoes and cook that for 1 minute till it soften slightly.

5)Now add in the chopped chicken into this and mix well.

6)Add in salt, pepper, red chilli powder, garam masala powder and mix well into the chicken.

7) Stir fry the chicken for 2 minutes until it is coated with the spice powders. You can cover the pan with a lid and cook until chicken is completely cooked. It will take around 3 to 5 minutes.

8)Now add in 1 tablespoon of coriander leaves.

9)Now reduce the heat to low and pour the beaten egg over the chicken and use a spatula to gently mix so the egg is in an even layer. Sprinkle top with some coriander leaves.

10)Cover the pan with a lid and cook on low heat for 1 minute until egg is cooked.

11)Now the omelette is cooked.

12)Now remove this to a serving plate and enjoy.

Expert Tips

Eggs – I used 4 whole eggs and portioned this omelette into 2 servings. If you want to serve this as single portion and increase the protein, you can use 2 whole eggs and 2 whole egg whites.

Add ons – for more nutritional benefits, you can use vegetables like carrots, beans, capsicum.

Chicken – Make sure to chop chicken into small pieces so it evenly distributes in the omelette.

Use right size pan – I like to use medium size skillet for this dish. Since I am cooking chicken and egg in the same pan.

Serving – Enjoy chicken omelette hot on its own or with rice or bread slices for a complete meal.

Storage – You can portion this and store in an air tight container upto 3 days. Reheat in microwave just for few seconds before serving.

Q: Can I use cooked chicken instead of raw chicken?

Yes you can add cooked cubed or shredded chicken in this omelette instead of raw chicken. You don’t need to cook longer. Just add into onion and tomatoes and mix before adding eggs.
