I thought of making kaju watermelon, strawberry, apple & lotus. Finally I ended up making kaju watermelon and apple. Once you make the basic cashew dough then you can shape it any way you like.

About Kaju Katli Apple

I first made these kaju apples for my Thala Diwali to share with my friends. They were so excited to know that I had made them at home. Because they looked and tasted just like the kaju apples we get from sweet shops and I was really happy with how they turned out.

Kaju katli is everyone’s favorite and this recipe is a fun twist to the traditional version. Instead of cutting the cashew mixture into diamonds, we shape it into little apples and decorated with some food coloring to make it look more real like apples. Check my badam katli, walnut katli.

You only need a few ingredients to make these kaju apples at home like cashews, sugar and ghee. Once the cashew mixture reaches the right consistency , shaping them is quite fun. You can also try other designs like kaju watermelon, strawberry, lotus and orange.

One thing people may struggle in this recipe is the cashew mixture may over cook and get dry or crumbly. If that happens to you, don’t panic. Just add a teaspoon of hot milk into the mixture along with a teaspoon of ghee and knead it well. You can add more hot milk as needed. The mixture should get like a dough consistency.

Imagine like a play dough, take small portion and shape like a ball and decorate. These are perfect to put in Diwali sweet box.

Expert Tips

Grinding Cashews – Make sure the mixie jar is completely dry. Grind the cashews in short pulses to get a fine powder. Avoid grinding continuously, as the cashews may release oil and turn into a paste.

Sugar Syrup – Cook the sugar syrup until it reaches one-string consistency. This helps the kaju mixture come together properly.

Work Fast – Don’t let the mixture cool completely, as it may become difficult to shape. Work when it is slightly warm, and grease your hands with ghee while kneading and shaping.

Small portions at a time – Work with small portions and cover the remaining mixture with a clean cloth or cling wrap.

Variations – You can also add a touch of yellow or orange color near the top for a natural apple-like appearance.
