Air Fryer Jacket Potatoes Recipe


Easy and Comforting British Classic Jacket Potato filled with Baked Beans, cheddar cheese. Potatoes are baked in an air fryer whole with their skins on, slit open and filled with hot baked beans and cheddar cheese to create this comforting classic dish. The cheese melts into the beans and every bite taste super nostalgic.

Jacket Potato Recipe

Jacket potatoes, if you are hearing about this for the first time. It is nothing but whole baked potatoes slit and topped with your favorite toppings. The first time I tried jacket potatoes is few years back and loved it so much.

The first time I topped with spicy chicken and cheese filling which was leftover from my baked chicken dip. I also added sour cream on top and It was so good. I should probably share the recipe soon.

About Jacket Potatoes Recipe

Jacket potatoes are a Classic British Comfort dish. Whole large potatoes are baked with their skins on. Once baked, the potatoes is cut in the middle and loaded with butter, hot spiced baked beans, cheese and green onions. Even though this dish is a classic. It is popularised by Jamie Oliver through his cookbooks, TV shows.

I used my Air fryer to bake the potatoes, it cooked it faster and also so evenly. It took me around 45 minutes for my potatoes to be baked. But the time totally depends on the size of the potatoes you use.

Once the potatoes are baked, remove and cut them in the middle. Be generous with the butter you add into the potatoes. It makes all the difference. If you don’t want to make loaded jacket potatoes, you can simply top with butter, sour cream and chives and enjoy it as baked potatoes.

But I went with the British classic baked beans and cheddar cheese. I added onions, garlic, chillies, spice powders into my baked beans to make it Indian style. And it totally worked. Jacket potatoes is a complete meal by itself, since it has beans, cheese and potatoes.

Ingredients

  • Potatoes – use large potatoes which are suitable for baking. Large, floury starchy potatoes are used for baked potatoes. Russet, Idaho, Maris piper, King Edward are great choice. In India, look for large starchy mature potatoes.
  • Butter – one of the main ingredient in this dish is butter. A dollop of butter is added to the potatoes as soon as it is baked will melt and create a creamy buttery texture.
  • Baked Beans – I used one can of baked beans in tomato sauce for making the filling.
  • Oil – I used regular olive oil for sauteing the onions as well as rubbing over potatoes to bake them.
  • Onion, Garlic and Chillies – these trio of flavours adds Indian touch to the baked beans and makes it super flavourful.
  • Spice Powders – I used a combination of chilli powder, turmeric, cumin and garam masala to add my Indian touch to the baked beans.
  • Toppings – you can use any topping you like. I went with cheddar cheese, spring onions and black pepper powder.

Step by Step Pictures

Cooking Potatoes

1)Start by cooking the potatoes. Preheat your air fryer to 190 degree C (375 degree F). Wash and scrub your potatoes really well, pat them dry completely using paper towel. Now place them on a sheet of aluminium foil, drizzle with oil and sprinkle salt over it.

2)Rub salt and oil all over the potatoes. Wrap the potatoes in the foil tightly.

3)Place them into an air fryer and bake them for 45 minutes until the potatoes is cooked completely. Insert a knife into the potatoes to check whether it is cooked.

Indian Spiced Baked Beans

4)While the potatoes are cooking, make the Indian spiced baked beans. Heat oil in a skillet. Add in garlic, onions and green chillies.

5)Saute this for couple of minutes until lightly golden in colour.

6)Add in spice powders and stir it well.

7)Now add in one can of baked beans into the sauted onion spice mixture and mix well.

8)Cook this for 4 to 5 minutes until the beans is mixed well. Taste and adjust salt in the baked beans. Keep aside.

Assembling Jacket Potatoes

9)Once the potatoes are cooked. Remove from the air fryer, unwrap the potatoes.

10)Make a plus incision on the potatoes and press it using your hands to open up. Now add 2 tablespoon of butter into the potatoes and mix lightly so the butter melts.

11)Top with ¼ cup of grated cheddar cheese.

12)place this back into the air fryer for another 2 to 3 minutes until the cheese melts.

13)Once the cheese melts, remove the potatoes from air fryer and top with the hot baked beans.

14)Top with ¼ cup more cheddar cheese, green onions, black pepper powder.

15)Enjoy Hot.

Expert Tips

  • Use large potatoes for this dish, around 250 grams to 300 grams is best.
  • Depending on the size of the potatoes, the baking time will vary. So always check accordingly.
  • Instead of an air fryer, you can use an oven to bake your potatoes.
  • I used cheddar cheese for my dish, you can use mozzarella as well.
  • You can top your beans with chopped onions, tomatoes, chillies as well.

Serving and Storage

Jacket potatoes taste best when served fresh and hot. If you want to store leftovers, store them in fridge and reheat back in an air fryer covered in foil.
