About Baked Oats Recipe
We have been making oatmeal for breakfast more often recently and most of the time it is my preferred breakfast of choice. This banana and blueberry oatmeal is my go to these days. If you are not into baked oats, then check my oats pancakes.
Mostly because it is super easy to make. And this doesn’t have the creamy gloopy texture which regular oatmeal has. Not that I hate it, but this has better texture than regular oats. So people who hate oats for its texture, will love this dish.
I made it super simple with pantry staple ingredients like milk, egg, maple syrup, cinnamon, baking powder, butter and oats. For my fruit and toppings, I used banana and blueberry which is a classic combo. I am sure your kids will love this, because my daughter enjoyed it and said it tastes like a dessert.

Ingredients
- Rolled Oats – I used rolled oats in this recipe, it provides texture to the baked oats. You can use instant oats or old fashioned oatmeal.
- Milk – For dairy free option, you can use oat milk, almond milk or soy. Coconut milk is a great option. But I prefer to use regular milk.
- Baking powder – a small amount of baking powder gives this baked oats a fluffy texture.
- Egg – I used one egg. This helps to set the oatmeal and also makes the texture fluffy and slightly custard like.
- Flavourings – ground cinnamon and vanilla extract adds flavour. I also added some salt. You can add pumpkin pie spice or play around with different flavourings.
- Butter – just 1 tablespoon of melted butter is added, you can use coconut oil.
- Banana and Blueberry – banana and blueberry combo is a match made in heaven. This taste absolutely delicious.

Step by Step Pictures
1)Preheat oven to 190 degree C (374 degree F). Take your 20 cm baking dish ready. Take ripe banana in the baking dish. Use a fork to mash the ripe banana in the baking dish.

2)Now add in egg, milk, baking powder, ground cinnamon, vanilla, salt, melted butter and mix well.

3)Now add in the rolled oats into this mixture.

4)Mix the oats with the wet ingredients.

5)Sprinkle blueberries all over the oatmeal.

6)Cover the baking dish with aluminium foil and place it into the preheated oven. Bake for 35 minutes covered.

7)This is how it looks after 35 minutes. Now remove the foil, bake for another 5 minutes until the top is light golden in colour.

8)Remove the baking dish from oven and let it sit for 10 minutes before serving. Serve baked oatmeal with greek yogurt or whipped cream and maple syrup. Enjoy warm.

- You can use coconut milk instead of regular milk. Any dairy free nut milk can be used.
- If you don’t prefer cinnamon powder, skip it.
- Instead of eggs, you can use one flax egg which is made by mixing 1 tablespoon ground flax seeds with 3 tablespoon of warm water.
- Instead of blueberries, you can add any berries or fruits like chopped apples, pear.
- Also chopped nuts like pecans, walnuts, almonds are a great add-ons.

If you want to meal prep this baked oatmeal. There are two ways of doing it. You can mix all the ingredients together, cover and place it in the fridge the night before and bake the next morning. Or you can bake it, cover and store in the fridge upto a week. Reheat at the time of serving in microwave for a minute or in oven at 180 degree for 10 minutes.
