Brownie Cupcakes Recipe, Imagine biting into a soft, fudgy brownie but in cupcake form. That is exactly what these brownie cupcakes are. Brownie cupcakes is made with melted chocolate, butter, eggs, sugar, vanilla, coffee, flour and cocoa to make these decadent brownies. They are rich, chocolatey and filled with caramel chocolate piece which melts inside to create this brownie.

Brownies are one of my favorite things to bake and I am always looking for new ways to make them. So instead of baking them in a regular brownie pan, I baked them in cupcake liners and made these cute little brownie cupcakes.

But First What is a Brownie Cupcake?

Brownie cupcakes are individual bite size morsels of brownies which taste so fudgy and chewy. The brownies are made like regular fudgy brownie batter but baked in muffin tray.

About Brownie Cupcakes

I love making these when I cannot decide between brownies and cupcakes. The batter for this brownie cupcakes is very simple and uses basic ingredients like flour, butter, eggs, sugar, chocolate, cocoa, dark chocolate.

The brownie batter can be made in less than 15 minutes and baking time is around 25 to 30 minutes. I start by melting dark chocolate with butter. I added a small amount of coffee which enhances the chocolate flavour in the brownies.

When baked, the cupcake will have slightly crispy edges with a soft and fudgy centre just like brownies. The best part is that they are really easy to serve like individual little brownies. 

These are perfect for parties, birthdays, kids treats, kids lunch box treat or even when you are simply craving something chocolatey. I usually like to have them warm with a scoop of chocolate ice cream on the side.

I made these brownie cupcakes few days back for my sister and her friends and it turned out to be wonderful. The brownies turned out to be just perfect. Loved it so much.

Once the brownie batter is made, instead of baking it in a tray I used my muffin pan to bake the brownies. I placed a piece of caramel filled chocolates in the centre and it added a nice chocolaty texture to it. I strongly suggest you to try it out.

Serve them warm with some chocolate sauce or a scoop of vanilla ice cream, whipped cream for an extra special treat.

Ingredients

  • Dark Chocolate – Use good quality dark chocolate for the best flavour. The brownie adds a delicious taste and chewy texture to the cupcakes.
  • Butter – try to use unsalted butter so your brownies doesn’t get too salty and you can control the salt leve.
  • Coffee – I used instant coffee powder in this to add an intense chocolate flavour. Coffee has the tendency to intensify the chocolate flavour. Mix the coffee with some hot water so it evenly mixes into the batter.
  • Sugar : I used granualted sugar for the brownie batter.
  • Vanilla extract : Vanilla adds a lovely aroma and balances the rich chocolate flavour. 
  • Eggs : You need eggs to create the crinkly crust on top of the brownies.
  • Salt : A pinch of salt added to balance the sweetness and brings out the chocolate flavour. 
  • All purpose flour : I used plain flour for the brownie batter. You can use regular flour or wheat flour. Wheat flour may alter the texture slighly.
  • Cocoa powder : Always Use good quality unsweetened cocoa powder for the best taste. 

Step by Step Pictures

1)Preheat oven to 180 degree C (360 degree F). Line a 12 cup muffin pan with cupcake cases. Set this aside.

Melting Chocolate

2)Take butter in a microwave safe bowl.

3)Add in dark chocolate in the same microwave safe bowl. Place it into microwave and heat at 10 seconds interval. It will take around 30 seconds for the chocolate to melt.

4)Alternatively you can melt it by placing the bowl over a pan of simmering water till it is melted.

5)Mix coffee powder with hot water until it is combined and coffee is melted. Pour this into the chocolate and mix well.

6)This is your chocolate mixture. Set this aside.

Creaming Eggs

7)Now take eggs, sugar, salt and vanilla in a bowl and whisk till creamy.

8)It will take around 4 to 5 minutes. You can use an electric beater to mix the eggs.

9)Add pour in chocolate butter mixture.

Make brownie batter

10) mix the melted chocolate and butter until combined.

11)Now add in flour, cocoa powder into the egg chocolate mixture.

12)mix well to form a smooth batter.

Fill Cupcake Moulds

13)Take a spoonful of the batter and spoon it into muffin cases.

14)Now this is optional. but I took some milk chocolate bar to fill the brownies.

15)I used caramel filled milk chocolate.

16)top with a piece of chocolate.

17)Place the chocolate piece into the brownie batter.

18)Now top with more batter. Fill the brownies ¾th in the muffin tray.

19)Now place the muffin tray in to the preheated oven and bake for 25 mins.

20)Remove the pan from oven and let it cool down completely.

21)Serve brownie cupcakes warm with some ice cream.

Expert Tips

  • Use good quality dark chocolate because it melts smoothly and gives the brownie cupcakes a rich chocolate flavour. 
  • For fudgy brownie cupcakes, bake until a skewer comes out with a few moist crumbs. If it comes out completely clean, the cupcake may become dry.
  • Cool the chocolate and melted butter mixture before adding it to the eggs. 
  • For extra fudgy cupcakes, add chocolate pieces in the center.

Storage and Serving

Store the brownie cupcakes in an airtight container and it stays good for 5 days. 

These brownie cupcakes taste delicious on their own. You can top them with chocolate frosting, chocolate sauce or chocolate shavings.  For an extra indulgent dessert, serve them warm with a scoop of vanilla ice cream and chocolate sauce

FAQ 

Q. Why are my brownie cupcakes dry ? 

They may have been baked for too long. Take them out when a skewer comes out with a few moist crumbs. 

Q. Can I make these with frosting ? 

Absolutely ! These brownie cupcakes are rich and chocolaty enough to enjoy without frosting. But you can also add chocolate ganache or buttercream frosting for an indulgent dessert. 

Q. Can I use semi sweet chocolate instead of dark chocolate ? 

Yes, but the cupcakes will be sweeter. If you prefer a deep chocolate flavour, dark chocolate works better.
