Eggless Marzipan Chocolate Recipe
I have heard about marzipan but have never tasted it before. It is nothing but sweet almond dough which is formed from powdered almonds and sugar. Even though it sounds complicated, it is actually pretty easy to make at home. Specially with this recipe, it is super easy.

I wanted to make a simple marzipan which can be had as a small treat. I created this eggless version because I am not comfortable eating raw eggs and also I know my daughter Maha will enjoy this, so I don’t want to risk giving her raw eggs. This eggless version was perfect and it gave a delicious marzipan.
About Marzipan Chocolates
First of all, what is marzipan? Marzipan is nothing but sweetened almond flour dough. Marzipan is mainly used in making chocolate covered marzipans, covering cakes, shaped into fruits like which is then had as a treat. It is even stuffed inside stollen dough and baked.
There are so many versions out there of making marzipan. Traditionally sugar is cooked to certain stage and then mixed with almonds to form a play dough like consistency. Some recipe uses egg whites to make marzipan.
The recipe which I am sharing here is an easy recipe for making marzipan. It is eggless, so easy to work with, starts slightly chewy. It is perfect for covering cakes and using in chocolates.

This is super easy to make. All you need is grind raw almonds. Yes you heard that right, for making marzipan you need raw almonds. No need to toast almonds, raw almonds provide the chewy dough like texture.
The most important thing is to take care when grinding almonds. Don’t over grind, else it will turn paste like. Once the almonds are powdered, add sugar, extract and lemon juice and blend again.
The mixture will resemble a powder. You have to add honey or maple syrup little a time and knead to a soft dough. Once the dough is formed, you can use them in multiple recipes. Like covering a cake, like fondant. Use in chocolates or stuffings.

Ingredients
- Almonds – raw almonds is used in making marzipan. Raw almonds doesn’t release their oil content as easily as toasted almonds.
- Sugar – I used icing sugar for making the marzipan. Always taste and adjust to your taste.
- Extract– a small drop of almond extract adds the aroma this needed.
- Lemon juice – lemon juice helps cut the sweetness from this and also adds moisture content in the marzipan.
- Chocolate coating – I used dark chocolate and butter which I melted to form a coating.

Step by Step Pictures
1)First lets make the almond flour. Take 1 cup almonds in a blender.

2)Pulse few times so it is powdered. Don’t blend too much else it may turn into almond butter.

3)Add in ½ cup to ¾ cup of powdered sugar. This totally depends on your taste.

4)Add few drops of almond extract.

5)Add some lemon juice.

6)Now pulse few more times until just combined.

7)Take this almond mixture in a bowl. Now add honey little by little and knead it well.

8)Keep mixing and keep kneading using your hands. Add more honey as needed. Just add little at a time. The consistency should be like a dough.

9)Make it into a soft dough like this.

10)Now take the marzipan it in a sheet of parchment paper. Roll it into a rectangle like this.

11)Now use a sharp knife to cut it into small squares like this. Place this in fridge to firm up a little. So it will be easy when dipping in chocolate.

12)Now make the chocolate coating. Take some butter in a sauce pan. Melt it gently

13)Take it off the heat and add some chopped chocolate or chocolate chips. Dark chocolate is better. The residual heat from the butter will melt the chocolate. If not melted, place on the lowest heat and melt again.

14)Now the chocolate is melted completely.

15)Take the marzipan from fridge. Remove the pieces one by one and coat it in chocolate. I use a spoon to coat the marzipan in the melted chocolate.

16)Once both sides are coated. Remove it carefully using a fork.

17) Arrange it in a parchment lined paper. You can top this with sea salt, sprinkles or chopped almonds at this point. Keep this in fridge for few minutes to set.

18)Now the chocolate is hardened. Enjoy.

19)You can store this in fridge in an air tight container.
