This is a great recipe for any party or celebration, easy yet so delicious. I just used simple chocolate syrup or chocolate glaze for topping. You can go one step further and use any frosting you like.

- Baking soda : This recipe doesn’t has baking powder. Baking soda is the raising agent. Baking soda helps the cupcakes rise and gives them a light and fluffy texture. It also works with the vinegar in the batter to create the lift.
- Salt : A small amount of salt added to balance the sweetness and bring out the chocolate and coffee flavors.
- Strong brewed black coffee: I used strong brewed coffee to give these cupcakes their delicious mocha flavour. Coffee also helps bring out and intensify the chocolate flavour without making the cupcakes taste too bitter.
- Sugar : Sugar adds sweetness to the cupcakes and also helps keep them soft and moist.
- White vinegar : White vinegar reacts with baking soda and helps the cupcakes rise without using eggs.
- Vanilla extract : Vanilla adds a pleasant aroma and balances the strong chocolate and coffee flavours.
- Vegetable oil : I used vegetable oil to keep these eggless cupcakes soft and moist. Oil gives the cupcakes a tender texture that stays soft even after cooling.
- Chocolate sauce or any frosting for topping : You can use chocolate sauce, chocolate frosting, buttercream or any frosting you like for topping.
- Sprinkles – Add sprinkle to make the cupcakes look extra tempting.

Step by Step Pictures
1)Preheat oven to 180 degree C (360 degree F). Line 12 cup muffin pan with cupcake cases and set aside.

Dry Ingredients
2)Take plain flour in a bowl.

3)Add in cocoa powder into the flour.

4)Add in baking soda and salt into this mixture.

5)Whisk it really well to evenly distribute all the ingredients. This is your dry ingredients.

Wet Ingredients
6)Take strongly brewed black coffee in a bowl. Add in vinegar.

7)Add in vanilla extract.

8)Add in oil. You can use melted butter.

9)Add in sugar into this mixture.

10)Mix this wet ingredients all together until the sugar is completely melted and the oil is emulsified into the coffee.

Make Batter
11)Now add in the dry ingredients into the wet ingredients.

12)Use a whisk to combine the batter gently.

13)Use an ice cream scoop to scoop the batter to fill the moulds.

14)Scoop the batter into the muffin cases. Don’t over fill the batter, just fill ¾th.

15)Now place this into the oven and bake for 18 to 20 mins.

Decorating Cupcakes
16)Remove it from oven and let it cool for 5 mins in the pan. Now remove from pan and cool it over some wire rack completely.

17)Now decorate the top with chocolate sauce or frosting.

18)Decorate with sprinkles.

Expert Tips
- Use strong brewed coffee or espresso as it gives the cupcakes a better mocha flavour. You can also use instant coffee dissolved in hot water.
- Fill each cupcake liner about ⅔ to ¾ full. This gives the batter enough space to rise properly.
- Add a handful of chocolate chips to the batter for extra chocolate flavour.
- Allow the cupcakes to cool completely before adding chocolate sauce or any frosting. Otherwise, the topping may melt and become runny.
Storage and Serving
Store the mocha cupcakes in an airtight container. Without frosting, it can be stored at room temperature for 5 days. It can also be refrigerated for a week.
