About Layered Chocolate Banana Cake

I always look for different ways to use overripe bananas and this banana chocolate cake is one of those recipes I make quite often. Those soft, spotty ripe bananas are actually perfect for baking as they add so much flavour, sweetness and moisture to the cake. 

Making this cake is always fun because you get to see the beautiful banana and chocolate layers once you cut the cake. The two flavours go so well together and the ripe bananas keep the cake soft and moist. Few other cakes which I make often is this banana cake and banana bread.

For this recipe, I made a simple banana cake batter and divided it into two portions. One is kept as the banana batter, while the other is mixed with melted chocolate and cocoa powder to make the chocolate batter.

Both batters are then layered in the cake pan and baked together. You get a beautiful banana chocolate cake that everyone at home will love. 

The best part is that you only need to make one cake batter, so there is no need to prepare two separate cakes. Serve it as an evening snack with tea or coffee or enjoy it as a simple homemade dessert with your family.

Step by Step Pictures

1)Preheat oven to 170 degree C (350 degree F).  Line a standard 9×5 loaf pan with parchment paper, grease with oil and set aside.

Melting Chocolate

2) Now lets melt the chocolate for the chocolate flavour cake. Take chocolate in a bowl.

3)Melt it gently either in microwave for 10 to 20 seconds or in a double boiler. Make sure the chocolate is completely melted.

4)Once it is smooth, add cocoa powder.

5)Mix this really well and set aside.

Dry Ingredients

6)Mix Dry Ingredients. Take flour, baking soda and salt in a bowl.

7)mix well using a whisk. You can sieve this mixture too.

Creaming Butter

8)Take butter, sugar and vanilla in a bowl.

9)Use an electric beater or a spatula to and cream this together until light and fluffy.

Make Banana Cake Batter

10)Add in eggs and cream again until combined.

11)Don’t over mix the batter.

12)Add in mashed banana.

13)Add in yogurt.

14)Mix the yogurt into the batter.

15)Now add in the dry ingredients and fold gently.

16)Use a spatula to combine the batter well.

Making Chocolate flavour

17)Once the batter is combined, divide it into two bowl.

18)To one bowl, add in melted and cooled cocoa chocolate mixture.

19)fold gently. This is your chocolate flavoured batter.

Baking the cake

20)Now take the loaf pan, spoon  banana batter and then chocolate batter. Spread evenly.

21)You can use a knife to swirl the cake lightly. Now place this into the preheated oven and bake for 1 hour and 15 mins. Insert a toothpick to check whether the cake is done, if it comes out clean then it is done.

22)Remove it from oven, cool it down for 15 mins in the cake pan. Now gently remove the cake from the pan. Place on a cooling rack and let it cool completely.

23)Once it is cool, slice and serve.

Expert Tips

Choosing Bananas – Choose bananas with plenty of brown spots. They add natural sweetness. If your bananas are very ripe and naturally sweet, you can reduce the amount of sugar slightly according to your taste. 

Room temperature – Make sure the butter and eggs are at room temperature so they mix well into the batter. 

No Over mixing – Once you add the flour, mix the batter gently until everything is combined. Over-mixing can make the cake dense. 

Melting Chocolate – Melt the chocolate over low heat or in the microwave. Let it cool slightly before adding it to the batter. 

Add ons – You can add chopped nuts or chocolate chips to the batter for extra crunch and flavour. 

Storage – Store the cooled cake in an airtight container and it stays at room temperature for 2 to 3 days. 

Serving – Serve this banana chocolate cake as an evening snack with tea or coffee. For special occasions, decorate the cake with chocolate buttercream, chocolate ganache or vanilla buttercream. You can also add sliced bananas on the top before serving.

Absolutely ! This cake tastes delicious on its own, but you can also decorate it with chocolate ganache, buttercream or any frosting you like. 

Q. Why is my banana chocolate cake dense ? 

The cake can become dense if you overmix the batter or add too much flour. Measure the ingredients correctly and mix the batter gently until everything is combined. 

Q. Can I use frozen bananas for this recipe ? 

Yes, you can use frozen bananas. Thaw them completely and drain any excess liquid before adding them to the batter. 

Q. Can I use milk chocolate instead of dark chocolate ?
