You all know my love for no bake desserts, I make quite a bit of them. Specially when they uses my favourites like chocolate, oreo, butter, cream. This recipe came from my imagination. Because after I made my chocolate mousse, I had leftover mousse. Also remembered that I had oreo cookies on hand. So decided to make a similar recipe to cheesecake with a bit of twist and it was a great success.

To start making the cake, the oreo cookies are crushed and mixed with melted butter to form the buttery oreo crust. This layer sets into a firm, and slightly crunchy base that adds a delicious flavour and also holds the mousse layer perfectly.
Then chocolate mousse is prepared by mixing dark chocolate, instant coffee powder, sugar and whipped cream. It turns into a soft, silky and rich melt-in-mouth texture that tastes absolutely decadent in every bite.
To make the dessert even more irresistible, the cake is finished with a glossy chocolate ganache topping. This final layer adds extra richness and gives the cake a beautiful bakery style look. Once chilled, the layers set beautifully and slice perfectly for serving.

- Sugar : Sugar used to balance the bitterness of dark chocolate and enhances the overall flavour of the mousse.
- Instant coffee powder : Instant coffee powder enhances the chocolate flavour and makes the mousse taste rich.
- Whipping cream : Whipping cream gives the mousse its creamy texture after beating.
- Topping – Dark chocolate chips and butter is melted to create a glossy chocolate ganache layer. It adds a rich chocolate finish with a smooth texture over the cake.

Step by Step Pictures
Make Chocolate Mousse Filling
1)Take water in a sauce pan.

2)Add in sugar and place it on low to medium heat.

3)Add in instant coffee powder.

4)Mix well and bring everything to a boil. Once it boils, take it off the heat and set aside.

5)Add in chocolate chips to the hot water.

6)Use a whisk to gently mix the chocolate until it is completely melted.

7)Pour this into a bowl and allow it to cool completely. You can keep this in fridge until needed.

8)Whip cream till thick. Use cold whipping cream for getting the required texture.

9)Add cream into the cooled chocolate and gently fold. Make sure your chocolate is completely cool before folding in the whipped cream.

10)How easy is that, chocolate mousse done. Set aside till use.

Make Crust
11)Take butter in a sauce pan and melt it, set aside to cool.

12)Now take oreo cookies in a blender and pulse few times till it is coarsely crushed.

13)It should form into crumbs like this. Instead of blender, you can use food processor or crush them in a ziploc bag.

14)Take the cookie crumbs in a bowl.

15)Pour in the cooled melted butter over the cookies crumbs.

16)Mix gently till the crumbs is coated well in the butter.

17)Spoon this into a baking tray or any pan that you are going to use for the cake.

18)Press it using a spoon evenly.

19)Now arrange the cookies on top of the crust.

Assemble Mousse Cake
20)Now spoon chocolate mousse over the cookies and spread evenly.

21)Like this. You can place this in fridge and allow it to set for few minutes while you make the topping.

Topping
22)Take dark chocolate chips and butter in a sauce pan or microwave safe bowl and melt it gently till chocolate is completely melted. Allow this to cool completely before pouring on top of the mousse.

23)Now pour this topping over the chocolate mousse.

24)Spread evenly.

25)Place this back into the fridge until set.

26)Slice and Serve.
