Palm Fruit Pudding Recipe (Nungu Pudding)


Nungu Pudding also known as Palm Fruit Pudding is made with simple ingredients like milk ,palm fruit, sugar, cornstarch and Agar Agar. You don’t need condensed milk ot cream to make this light, refreshing and cooling pudding made with palm fruits (nungu) specially on summer days.

I love making pudding, they are so much fun to make and eat. Specially when you are having kids around they make a perfect dish to enjoy. My younger daughter loves pudding and I specially make variety of them just for her. This is one such pudding which I made for her. She is just like me, love palm fruit so much. So I made this pudding using palm fruit and it turned out just perfect.

I didn’t have condensed milk on hand, so developed this recipe without condensed milk and it was just the perfect taste. I was looking for a pudding that would just taste like nungu or palm fruit and this is the right one.

About Nungu Pudding Recipe

Nungu also known as palm fruit. It is also known as ice apple. It is a firm jelly like fruit that is inside palm fruit. This nungu is used in many desserts and it is a natural summer coolant.

One of my favorite drink is this nungu sarbath and nungu payasam. One of the popular recipe that I make at home is this nungu ice cream.

Nungu pudding is a simple pudding made with palm fruit. It is made with basic ingredients like milk, sugar, palm fruit, vanilla, nungu. Traditionally I use sweetened condensed milk, but I used cornstarch in this instead.

The one question I get asked the most is, “Why is my pudding not setting?” Whenever you make a pudding using agar agar powder, make sure the mixture comes to a good boil or at least a simmer. This is important because the heat helps the agar agar dissolve and activate properly. Once you pour the mixture into small cups, it will set much faster in the fridge.

For this pudding too, bring the milk to a boil first. After adding the nungu puree, make sure you bring the mixture back to a gentle simmer before taking it off the heat. This simple step is what helps the pudding set beautifully.

Ingredients

  • Milk – use full fat milk for making this pudding, it form the base for the pudding.
  • Nungu – choose tender and soft nungu for this recipe. You need around 1 cup of nungu in which I pureed ¾ cup and chopped ¼ cup.
  • Agar Agar Powder – agar agar powder makes this pudding set.
  • Cornstarch – I added little bit to create a creamy texture.
  • Sugar – You can add more or less depending on your taste.
  • Flavourings – I used vanilla extract

Step by Step Pictures

1)Take ¾ cup nungu in a blender.

2)Puree till smooth. Set aside till needed.

3)Take sugar, cornstarch, agar agar powder in a sauce pan.

4)use a whisk to mix it really well until evenly mixed.

5)Now pour in the milk and whisk really well until agar agar powder and cornstarch is melted.

6)Now place it on heat and bring it to a full boil. Keep mixing using a spatula all the time.

7)Let it come to a boiling stage.

8)reduce the heat and add in the pureed nungu into this. Mix this really well. Bring this mixture to a simmering stage. Keep mixing so it doesn’t burn at the bottom.

9)Now add in vanilla and mix well.

10)Remove it from the heat.

11)This is the thickness it will be.

Making pudding

12)Take small pudding cups, add the chopped nungu into the cups.

13)Pour the milk mixture into the cups. Cover the cup with plastic wrap and place in fridge for 4 hours.

14)Once it is set, gently ease the sides with fingers or use a knife to gently remove the air.

15)Invert it to the serving plate and enjoy.

Expert Tips

  • If you prefer more creamy pudding, add ½ cup of cream into the milk mixture.
  • You can add more or less sugar depending on your taste.
  • Add in some sweetened condensed milk if you prefer creamy pudding.
  • Always bring the mixture to a full simmering stage so the agar agar sets.
  • You can add more chopped nungu pieces.

Serving and Storage

Nungu pudding can be served on its own. You can enjoy this with any sauce if you like. This nungu pudding can be stored in fridge upto a week.

Q: How can I make this vegan?

You can use coconut milk instead of regular milk to make this vegan.

Q: Can I use agar agar strips instead of agar agar powder?

Yes you can use around 8 to 10 grams of agar agar strips instead of powder. You might need to boil it first before adding.

Q: why my pudding not setting?

Whenever you make pudding with agar agar powder, make sure the mixture comes to a boil or simmering stage. It helps agar agar melt completely. Once the mixture is poured into small cups it sets in fridge faster.
