I learned this recipe from my Aachi. She makes a quick upma using leftover puttu from the morning or day before. It taste so delicious when tossed with fresh coconut and freshly roasted spices. I made a similar ragi upma using ragi flour and it turned out delicious.

About Rice flour upma

Rice flour upma also known as arisi maavu upma or rice upma is a simple and quick breakfast dish made with rice flour. Traditionally arisi upma is made with rice rava but this version is even quicker and healthier.

Rice flour is one ingredients which is always in my pantry, so I can whip up this upma in no time at all. Few weeks back I made a ragi upma and every one in my family loved it specially my Diabetic Mother In Law.

This version is made with rice flour, fresh coconut. What makes it tasty is the tempering ingredients. I used mustard seeds, urad dal, dry red chillies, curry leaves, green chillies. You can add any vegetables to make this more wholesome.

Ingredients

  • Rice flour – I used regular rice flour, you can use red rice flour or even black rice flour in this recipe.
  • Oil – Coconut oil adds flavour, but you can use ghee or sunflower oil.
  • Coconut – be generous with the fresh coconut, it adds a fresh bite and taste.
  • Whole Spices – For tempering, I used coconut oil, urad dal, dry red chillies, curry leaves and green chillies.

Step by Step Pictures

1)Take rice flour, salt in a bowl. Mix well. Add some water.

2)Use your hands to crumble the flour with water to form coarse breadcrumbs like texture.

3)Now use a ladle to scoop some of the rice flour mixture and place on idli steamer.

4)Place inside idli pot and steam cook for 5 to 8 minutes until the mixture is cooked. Remove from steamer, crumble them with your hands and set aside.

5)Heat oil in a kadai. Add in mustard, urad dal, dry red chillies, curry leaves, green chillies.

6)Fry this in oil until lightly golden.

7)Now add in the cooked rice flour mixture, add in coconut and toss well.

8)Cover with a lid and let it cook on low heat for 2 mins.

9)Serve hot.

10)You can enjoy with coconut chutney or sugar.

Expert Tips

  • Instead of using white rice flour, you can use red rice flour too.
  • Leftover puttu can be added instead of this rice flour mixture.
  • Chopped onions, carrots, can be added with the tempering.
  • When stir frying, if the mixture looks too dry sprinkle some water and cook.

Rice flour upma taste best when served fresh and hot. You can enjoy with sugar or coconut chutney.
