If you haven’t tried strawberries with yogurt, you are missing out. This is one of the easiest desert you could ever make. But don’t under estimate the taste, it taste so delicious, specially when served over some vanilla ice cream. But I like it more with some greek yogurt.

I have always loved simple desserts that don’t need much effort. This vanilla balsamic strawberries with greek yogurt is exactly that kind of recipe. There is no baking, no complicated preparation and you only need a few simple ingredients to put it together. 

I like to use sweet, ripe strawberries for this recipe. The strawberries are tossed with a little vanilla, balsamic vinegar and salt and left to sit for a while. I used my homemade vanilla bean paste for this and it made huge difference.

As they rest, they release their juices and create a lovely sweet and tangy syrup. This syrup is what makes the strawberries extra delicious.

The combination of strawberries and yogurt is just so good. I like to use thick, creamy greek yogurt so that it holds all those juicy strawberries and their syrup. The slightly tangy yogurt also balances the sweetness of the strawberries really well.

Preparing strawberries

1)Use fresh, ripe and sweet strawberries for this recipe. Choose firm, juicy berries for the best flavour. 

2)Wash strawberries really well. Pat them dry completely. Take them in a cutting board.

3)Remove the stalks off the strawberries.

4)chop strawberries into small pieces. You can just halve them if you want to.

5)Take the chopped strawberries in a bowl.

Marinating Strawberries

6)Add sugar to your strawberries. You can add as much as you like. Also instead of sugar, you can use honey or maple syrup.

7)Add in vanilla bean paste. You can use vanilla extract too.

8)Now add in good quality balsamic vinegar.

9)You can start with a little, taste and add more if you want.

10)Mix well, Cover and let it sit at room temp for 1 to 2 hours.

Serving

12)Take serving bowl, spoon ½ cup greek yogurt.

13)top with ½ cup of strawberries.

14)now spoon ½ cup more greek yogurt.

15)and ½ cup of strawberries along with the juices.

16)Serve.
