One pot cheesy chicken tomato pasta bake is a simple and tasty pasta made with chicken, pasta, homemade pasta sauce, seasoning and lots of cheese. Everything is cooked in one pot, then topped with cheese and baked until hot and bubbly. It is an easy meal to make for lunch, dinner or parties.

I love making one pot recipes because they are so simple and easy. You can do everything in one pot, which means less cooking and less cleaning afterwards. They are perfect for busy days when you want to make a tasty meal without spending too much time in the kitchen.

This pasta dish is one of the best and it all came together in under 30 mins and it was delicious. I used homemade pasta sauce which made this pasta so much better. You could add vegetables in this or you can add some cooked mushrooms. Kids will love this pasta like my mac and cheese recipe.

About One Pot Chicken Tomato Baked Pasta

This cheesy chicken pasta is made slightly different from the usual pasta recipes, instead of cooking the pasta separately and making the sauce in another pan, everything is cooked together in one pot.

The chicken is cooked with pasta sauce and simple seasonings, then pasta is added along with required liquid and cooked until soft and tender. 

As the pasta cooks, it absorbs all the flavour from the tomato sauce and seasonings. Once the pasta is cooked, add plenty of mozzarella cheese and let it melt into the sauce. The result is a creamy, cheesy and flavourful pasta without much effort. 

You can use any pasta you have at home like penne, rotini, macaroni or fusili. Leftover cooked chicken can also be used to make this recipe even quicker. 

I love serving this cheesy chicken pasta hot with garlic bread, toasted no knead bread or a simple salad for a comforting meal.

  • Pasta : I prefer using small pasta like penne, fusili or macaroni for this recipe. They cook nicely in the sauce and are easy to coat with all the flavour. 
  • Pasta sauce : You can use homemade or store bought pasta sauce. 
  • Paprika : Paprika is optional, you can add or leave it. You can even use red chilli flakes.
  • Oregano : Italian seasoning or oregano adds a nice Italian herby flavour to the tomato sauce. 
  • Seasonings – I used salt and sugar in the sauce which totally balance the taste.
  • Mozzarella cheese : Mozzarella cheese melts beautifully and gives the pasta a delicious cheesy finish. 
  • Boneless & skinless chicken breast : Chicken breast is easy to cook and works well in this one pot pasta. Cut it into small pieces so it cooks evenly and stays tender, juicy. 
  • Olive oil : Olive oil used to cook the chicken and adds a rich taste to the dish. 
  • Water : Water helps to cook the pasta in the sauce. Add the required amount so the pasta cooks without becoming too dry. 

Step by Step Pictures

1)Preheat oven to grill or broil mode at 250 degree C (500 degree F). Heat olive oil in an oven safe pan, add in cubed chicken.

2)Saute for couple of mins till the chicken is well seared.

3)Once chicken is seared. Add in pasta sauce.

4)Add in paprika, oregano, salt, sugar and mix well.

5)Cook this for few more minutes.

6)Pour in water and bring it to a full boil. Add in pasta and cook on a low heat till it is completely cooked. It will take around 10 to 12 minutes.

7)Now the pasta is cooked completely.

8)Now add in cheese over the top and place it under the broil or grill for 4 to 5 mins till it is golden and bubbly.

9)Remove from oven, cool slightly.

10)Enjoy hot.

Expert Tips

  • Use a wide sauce pan or oven safe pan so the pasta cooks evenly.
  • Stir the pasta now and then while cooking to prevent it from sticking to the bottom. 
  • Add the cheese towards the end and let it melt into the hot pasta for a nice cheesy texture. 
  • You can add a mix of cheese like cheddar, parmesan to make it extra cheesy and delicious. 
  • If you like spicy pasta, add some chilli flakes along with the other seasonings. 

Serving and Storage

Allow the leftover pasta to cool completely and store it in an airtight container in the refrigerator. It keeps well for 3 to 4 days. The pasta may become a little thicker after refrigeration. So, add a splash of milk, cream or water and reheat it gently on the stovetop or in the microwave. 

Serve this cheesy chicken pasta hot and it tastes delicious on its own from the pot. You can also serve it along with garlic bread, toasted no knead bread or a simple salad for a comforting meal.

Absolutely. Simply skip the chicken and add vegetables of your choice to make a delicious vegetarian version.
