About Mawa Cake (Khoya Cake)

Super moist and delicious mawa cake which is an easy recipe to make and taste so fluffy and soft. This is perfect for breakfast, brunch or evening tea time. This cake is not too sweet, mildly sweet and taste just right with coffee. Check my khoya burfi.

The cake is eggless, uses just butter, sugar, vanilla, khoya, yogurt and mix well until creamy. Add in plain flour, baking soda, salt and milk to form the batter. I used vanilla alone for flavouring, but you can use cardamom and saffron also.

Since the batter has khoya in them, it taste so delicious like a milk pudding. Resist from eating it and transfer to a baking tray and bake.

It goes well with a cup of tea or coffee. This keeps well for 2 to 3 days at room temperature. You can store this in fridge for more than a week and heat whenever you need.

Ingredients

  • Butter – Use soft unsalted butter. You can use ghee also.
  • Sugar – I used regular granulated sugar for this cake batter.
  • Flavourings – vanilla, saffron or cardamom can be used for flavourings.
  • Yogurt – Since this cake is eggless, you need yogurt as an egg substitute.
  • Mawa – I used unsweetened khoya or mawa for this recipe. Make sure it is unsweetened which is very important.
  • Plain Flour – I used plain flour for the batter. Wheat flour may alter the texture slightly, but you can try using it.
  • Baking Soda – baking soda makes the cake soft and rise.
  • Salt – a pinch of salt enhances the taste of the cake.
  • Milk – whole milk is used to adjust the consistency of the cake batter.

Step by Step Pictures

1)Take softened butter, sugar and vanilla extract in a bowl. At this point you can add in ground cardamom and saffron as well for flavour.

2) Mix using a whisk or hand blender till it combined and creamy. Add in yogurt at this point and mix well.

3)Add crumbled khoya into this mixture and mix well.

4)Mix well until khoya is incorporated into the sugar butter mixture.

5)Add in plain flour and baking soda at this point.

6)Add in some salt and mix well.

7)Fold the flour into the batter, pour in some milk and fold gently.

8)Now the cake batter is ready.

9)Spoon the batter into a parchment lined pan and spread evenly. Garnish with nuts if needed.

10)Place into the oven and bake until cooked and golden brown. Remove the cake from oven and cool completely.

11)Slice and serve.
