Gulab Jamuns! I have a serious addiction to these beauties. I can never stop having them. Even yesterday I had three of those beauties which I bought from my favourite bakery. I love making them too. They can be made so many different ways, in my blog i have shared few variations of them and this sweet potato jamun is another one.

I have already made paneer gulab jamun and potato gulab jamun recipe. These jamuns are made with sweet potatoes. They turn out so yummy and melts in your mouth. You don’t need lots of ingredients to make this as well.

About Sweet Potato Gulab Jamun

Gulab jamun is one of the most loved Indian sweets and is traditionally made with khoya or milk powder, flour and sugar syrup. But I never knew we could make our favorite gulab jamun with sweet potatoes.

The dough is made with cooked mashed sweet potatoes, plain flour and salt. To enhance the taste, you can add some milk powder too. But I used only plain flour and it turned out so good.

The most important step in this gulab jamun is, there shouldn’t be any lumps in the gulab jamun dough. it has to be lump free and smooth. So you can either grate it or pass through a sieve to get fine mix.

Once the dough is shaped into balls, fry on medium high heat so it cooks from inside out. Since sweet potatoes has natural sugar content, the colour will darken soon. So you have to fry on low medium heat until you get golden colour.

Once fried, you have to add hot jamuns to warm syrup. It is one of the most important step. The jamuns will get beautiful colour as it fry and melt in mouth texture. It also absorbs the syrup faster than regular jamuns. So once soaked, remove from syrup and keep them in fridge until serving.

Ingredients

  • Sweet potatoes – Make sure to use large sweet potatoes. Cook them until completely soft and cooked. And the most important part is, you have to mash them finely. There shouldn’t be any lumps.
  • Plain Flour – I used plain flour into the mashed sweet potatoes to make the dough. You shouldn’t use too much flour, else it may make the jamuns dense.
  • Salt – a pinch of salt always enhances the taste of the jamuns.
  • Sugar – sugar is used in making the sugar syrup for the jamuns. Use granulated sugar.
  • Flavourings – for flavouring syrup, you need to use cardamom, saffron, rose water.
  • Oil – Neutral cooking oil like refined sunflower oil is used for frying. Ghee is also best option for frying.

Step by Step Pictures

Sugar Syrup

1)lets make the sugar syrup, take sugar in a sauce pan.

2)Pour in water. You need to use 2 cups sugar and 2 cups water.

3)Place the sauce pan on heat. Once it comes to a good boil, cook for 5 to 6 minutes until it gets sticky stage. Add in crushed cardamom, saffron and rose water.

4)You can transfer this sugar syrup in a large bowl and keep the sugar syrup warm.

Sweet Potato Jamun Dough

5)You have to cook the sweet potatoes, cook till it is completely soft. Peel the skins off.

6)Now you have to mash it completely. Once it is mashed, found some lumps here and there, so I pass it through sieve. THE IDEA IS YOU SHOULDN’T HAVE ANY LUMPS.

7)I measured out the mashed sweet potatoes in a cup. You need around 2 cups of mashed sweet potatoes.

8)for two cup of mashed sweet potatoes add in 4 tablespoon of maida (plain flour).

9)Add a pinch of salt.

10)Mix this really well to form a soft and smooth dough.

11)Take a small portion of dough.

12)Shape it into a smooth crack free ball.

13)Roll all the dough just like this.

Frying Jamuns

14)Now heat oil for deep frying. drop the rolled jamuns in hot oil one by one and fry on a medium heat till golden.

15)Keep mixing this for even colouring. It should be golden in colour. It will take around 5 to 6 minutes of frying.

16)This is the colour we are aiming for.

17)Now strain the jamuns.

Soaking Jamuns

18)Add the fried jamuns to the warm syrup immediately. Let them soak for 30 minutes. The jamuns will absorb the syrup better.

19)Once the jamuns are soaked. Remove the jamuns carefully into a bowl and chill.

20)Serve.

Expert Tips

  • Mashing the sweet potatoes is the main step, you can puree them in a blender or grate them using a fine grater.
  • Don’t add too much maida, if your mix is sticky, then add another tblspn of maida. If you add too much maida then the jamuns will get hard.
  • Fry the jamuns in low to medium heat. A small trick is, once you add jamuns to oil, don’t stir immediately, leave them for a min them stir so you don’t break the balls.
  • You have to add hot jamuns to the syrup so it absorbs the syrup better.
  • These jamuns will absorb the syrup faster, so if you leave the jamuns in the syrup for long time, then they will break up.

Storage and Serving

You have to store the jamuns in fridge until ready to serve. It stays good for a week in fridge.
